5:32 Hoyo actually did a pretty good job translating how sharks behave into Ellen's personality. Sharks are very solitary and aloof creatures, and when they aren't on the hunt are actually rather passive. Certain species of shark also can not sleep, as if they stop moving for longer than a few minutes, they suffocate and drown as they need to stay in motion so the water can pass through their gills properly to provide them with oxygen. So they translated these quirks of shark behavior to Ellen's personality by yes, making her very introverted. She is also always tired as a reference sharks being unable to sleep (well that and she has 2 jobs on top of being a student lol).
BTW if you didn't realize it yet still. In her teaser she had her weapon on the cart she was pulling it was just covered up, but if you look closely you can see a glint from the metal blades. As for her tail... yes it is her real Shark Tail if you are still unsure.

I'm actually really excited for Zenless Zone Zero! It looks really cool! The art direction of the game is really amazing!
