No, surely I'm missing something, try "Spanish tortilla". And there it was! Now, I've settled that and I didn't have to be pedantic (lol) I'm going to watch this again and appreciate your incredible chopping, cooking, flipping skills. When I was able to cook,I made tortilla with the usual potatoes and onions,but I also sautéed red peppers with the onions.I precooked boiled,cubed potatoes,then mixed all ingredients together and slightly browned the potatoes.I finished off with seasoned beaten eggs.......as many as you like.!!! xxx

I'm watching from the middle of Iowa. I just love seeing what you're fixing up next. It's nice because you use ingredients I have on hand. I wished I could smell all the goodness! I come from Czech heritage and love the recipes that use cabbage, onion, potatoes and such. I grew up using caraway seed in a lot of meals. Fried chicken with caraway is my favorite. We put it into kraut when canning. Not too many recipes call for it. Maybe it's an acquired taste. Pork roast with kraut and dumplings is another favorite. Sprinkle a little caraway on it while it's in the oven. Mmm good! Thank you for sharing your skills with us.
Made this for dinner last night. Potatoes are a no-no for me due to diabetes, so I put steamed cauliflower in instead. Absolutely fantastic! Just as good this morning with a bockwurst sausage for breakfast! I really thought the cabbage would be a far stronger taste, but cooking it in oil really toned it down. This is a winner for me. Definitely going on the regular list.

I live in Asturias, northern Spain. Tortilla is a national staple. Never made it with cabbage but in the South, there are bars that sell it with a multitude of fillings. My Spanish family taught me how to cook it. However, we fry the lot and cut the potatoes in small pieces. But, I recently prepared the lot mixed it with our fresh chicken eggs. Put it in a pan in the HY Sapientia oven to set: perfect. Didn't have to flip it! Tip move the mixture around the pan and it won't burn, before you flip it. Best served with pan pan/ French bread. Try it with tuna. YUM❤❤❤❤❤😍
Omg! The thickness of your tortilla is like the ones my dad used to make. He did lots of varieties of tortillas, but this one never. I so want to try it now. I love cabbage and the added cheese at the end. Looks so good! Types my dad would do, one with sliced green olives, one with green pepper slices that he had pre-fried, and also one with spinach. I will try yours this week!

As so often I’ve learned a lot from your presentation. I thought tortilla was only a thin flatbread not also a Spanish omelet. I guess torte just means round. Your way of giving small extra useful observations and techniques is so helpful. I cook very much as you do but far below your knowledge, expertise and experience so it is delightful for me to be given hands on help. I would though call this an Irish Tortilla especially adding the green. Thanks so much and please keep cooking

Looks great! Love cabbage. Never seen the point of mozzarella [no taste] Rather than flip it I give it a few minutes under a hot grill. Test with a skewer in the middle!
The point of mozzarella is how melty it is without greasiness,also how creamy it is,so that’s why it’s mainly a cooking cheese,though when marinated it can be eaten cold.Cheddar on the other hand is a great eating cheese,but not so much in cooking,it gets very greasy,and can separate easily,on a toasted sandwich it’s good because it isn’t heated to much.😊
