I've been making veal osso bucco with Risotto Milanesse for more than 25 years. So I couldn't resist watching your version. Your version is so radically different than mine, I won't even try to list the differences but it looks intriguing. Your approach of using the extra veal stock for the risotto makes so much sense! I'm (almost) convinced to give it a go. I'm sure it would be superb! There is one tiny, subtle addition that you could add to your stock and that's a couple of slices of lemon rind. Great recipe BUT your pronunciation needs schooling. Being of Italian background myself I cringe when I hear the twang in our beautiful language. .... just saying
