Laois, despite his eccentric personality, knows and understands the dangers of monsters. As established in the kelpie episode where it tried to eat senshi, laois is probably the best monster slayer in the land due to his intimate knowledge of them
You do know that ever since they started their adventure, Laios has always been killing the monsters and then eat them, right? It's the same thing with the griffin, nothing out of ordinary.
It be interesting how other adventurers couldn’t be bothered to go any deeper in the dungeon because all they care about is immediate profit. And they couldn’t handle the monsters since they lack the knowledge Laios has.
He's a "fan" of monster and have high knowledge about their nature, which probably why he still treats them as dangerous foes. Also bit spoiler (not related to plot tho) One of few times he's embarassed is when he don't know about one particular monster thay everybody else knew
Funfact for you all: Skyfish is based on a modern day cryptid usually named the same way. The reality of the sunfish, is that it is actually cctv recording/images if moths with a low exposure capturing its wing beats as blurs. Making a skyfish like shape and motion.

While Sky Fish is a super rare encounter and easily fastest monster in existence. It can barely do any damage to any human being. It punching through griffin was load of crap
It's a summoned monster that she's designed with the intention to do this one thing. It deliberately has a sharp and likely tough beak/nose and can accelerate to great speed. Even dust particles in space can damage spacecraft due to their relative speeds, it makes absolute sense that this thing can punch through the thinnest and least protected part of the griffon
