They play the instrumental composition, Kuda Mandara Giri, by I Nyoman Windha.
The piece uses angklung kocok tuned to the gong kebyar.

They are called angklung kocok (shaken angklung) or just angklung. This is a special case of their use, to have so many and to have them tuned to the gamelan gong kebyar. The novelty of this use is why people cheered when they first saw them.

I believe it's completely normal in Bali for sanggar (private-non-banjar) groups expand and contract as needed. So, when a bigger event happens, some additional people play. The group probably couldn't support such a big group all the time. They have practical constraints.

I am starting to try to learn more about this amazing form of music. Could you tell me the name of those bamboo looking percussive instruments they play with the red, white and black poms on the top?

Why do you care about their age? Most of them are in their 30's. Is that really old?
You said "some of the member aren't originally from the group," but actually most festival gong kebyar groups don't even exist beyond the festival season. Semara Ratih has been performing continuously, every week, for almost twenty years. They added some players for the festival; you need a bigger group for the festival. That's normal. Still, 90 percent of them are original members.
