I’m so sorry folks for saying this is a vegetable or vegan dish. Because I don’t add meat I think in my head that it’s vegetarian, not thinking that the beef broth is surly not vegetarian. Ooopppps !!!
Also my family added ham hocks for flavor. I can't find those anymore so I use pancetta. I fry it down so I don't get any fat pieces in my pasta fagioli and it adds a lot of flavor. Also we cook it with the rind of the parmigiano reggiano for flavor. I like to see how everyone else does it though. It's so good. I will try it without the pancetta next time just to taste that difference.
We ate this as one of our weekly meals growing up. There are many versions. Here’s the simple; Boil ditali pasta to almost al dente, drain reserving about 1 cup of water, put back on the stove and add 1 can of Van Decamp Pork and beans, add back the reserved water, add spices, salt pepper oregano onion powder, garlic, heat, and serve! Top with parm cheese and red chili flakes to taste. Done in 20 min. The pork and beans has a tomato sauce. If you want you can add cooked chicken for added protein, but pasta and beans alone are perfect. I made this for my kids and they loved it, also made it for their friends, my friends kids and everyone loves it and always remembers and talks about how delicious it is. My 89 yo father made this all the time for himself after my mom passed away. Don’t sweat over the stove when you can make it just by boiling a pot of ditali and adding the beans. Adding some of the pasta water just helps to keep it from being too dry. Yum. Now I want some.
We always used garlic, onion, saute. Add tomatoe (whole peeled,) add oregano, salt/pepper then add white beans (dry cooked) with water then add Ditallini pasta, Romano cheese. Fantastic....

Add veggie broth along with V8 low sodium better flavour and less salt. I have never heard of any beef broth used very odd I think its far better with V8 and if you boil onions, with carrots and celery than blend it you get a far greater taste. Even just the onion, c,carr water will flavour it just fine This is what Nonas used back in the day Just boil 3 onions with carrots, celery, include the leafs too and add sprinkle of salt. Simmer for 45 mins for max flavour
Way too too too much salt and too much oregano. Also kirkland costco brand oregano is not 100% Oregano it has mustard seeds filler. Better off using greek or italian oregano purchased at Freshcho or European /Italian shops. Also cook down the tomatoes then blitz them to thicken before adding other ingreds. You can also take out a half cup of bean tom mix blitz that then add it Use parma cheese rinds or grind cheese in for flavour rather than so much salt Use kocher or coarse sea salt but not so much it will give so much flavour but parma or romano cheese will give it ultimate flavour boost

I added garlic from the jar. I usually make this with jarred or canned tomatoes but in this dish I used my fresh tomatoes from my garden.

You can use Ditali pasta for the ultimate meal but you can also use any small pasta like elbows.

I like it with onion , carrots, and celery - No Garlic! Try it . The garlic hides the onion. Its also better without cheese.

Yes, you are right, that is one version. You can also make it the way my father did which was with red kidney beans. You can mix and match lol

My mother’s original recipe didn’t have the carrots either, but it tastes great with them. Now the tomatoes is a must for me!
