Great video! I practice Traditional Chinese Medicine but am just now learning what the herbs I use and prescribe actually look like in the wild. I stumbled across 8 pounds of Maitake yesterday, medicinal processing aside, I had no idea how to actually clean and cook and eat these monsters. They are absolutely delicious, my 8 year old loves them as well. Cheers!

I've been hunting for Hens for 3 years with no luck. Last year I found a big stand of giant Bur Oak trees after all the leaves were on the ground (too late for Hens). This year, I've been going back every weekend for the past 2 months- nothing, nothing, nothing then BAM! I found more than I could carry. One tree had 9 and I found a dozen trees with Hens. I also found the largest and freshest Chicken of Woods I'd ever found. But now I have a new problem- no more room in the freezer!

By far my favorite mushroom! After I process them I immediately dehydrate and vacuum seal them. They last years and when I reconstitute them I use 50/50 beef broth and water. A Lil butter and garlic when sautéing and it's like eating little steaks! Mmmmm fall is my favorite mushroom season!

My favorite mushroom is lion's mane it is the lobster of the woods beautiful succulent and most best served in a butter and herb sauce! Oh my God man what a treat you got to get up in there on the mushrooms you know. I found one of these a week ago (mid October) for the first time ever. I find it incredible that we have the same species here in the UK, thousands of miles away on a different continent!

Wild Meat Let's Eat it was on a stump, probably a conifer of some sort. Although there used to be a lot of oak before the landowner poisoned them some 30 or so years ago to make way for the god awful pines trees. Luckily the woods are starting to regenerate and a lot of deciduous trees are returning.
I even keep my eyes open when driving through county roads, when I hit major jackpot I Bring to 2 high end restaurants and once look over I get $7-10 a pound.. after I make the stock and save some PCs for couple meals I marinade them and can them, simple 50/50 bottled Italian dressing to water, add 1tsp salt to quart jar and can away.. it's an amazing mushroom, can make some money and have tons of meals, I even can in garlic, rosemary and oil after getting stock. And stock can use for anything that calls for water(try macaroni) deglazing pan, stir fry, drink lol, whole thing is amazing, and I don't think a poisonous cousin is out there? Gl

I think this is growing from the hole a woodpecker made in my Aspen tree. I spotted it yesterday. I am not going to try it since my mushroom knowledge comes from utube, it is beautiful though.
If the woodpecker hole is 3 feet off the ground or lower... maybe. This mushroom associates with the roots so typically you'll find them on the ground. It's not impossible to find them on a tree however it will be close to the ground. I think passing is a good idea... but please continue to look at the base of oaks you may find one. Please keep in mind when finding/trying any edible wild mushroom... 1st be 100% sure you have the right ID... 2nd only try a little at 1st to ensure your system agrees with it... just because it's edible doesn't mean you can't get sick. 3rd start slow, understand all look alikes... it only takes one mistake. Rule number 4 see rule 1, 2 and 3. I'm so glad you found a chicken of the woods... that's a good starter mushroom. Thanks again for your support and happy hunting to ya!!! Found a big score of this stuff Saturday, wasn't really expecting to find anything, had to use my jacket to carry it back to the car but I came away with about 35 pounds from one tree!!!

Hi! Did you try to ferment them? They are amazing! They become whitish in color but they taste wonderful. Boil potatoes and eat in one bowl+ add some vegetable oil. Russian way. Delicious!

Hi, thank you for this video. At the end, when you sauteed and ate them, were these mushrooms boiled first? Or just cleaned and sauteed before being eaten? I'm wondering if they should always be boiled before sauteing or not? TY! 🙂
@cynthiafreeman4543 I have never boiled them.... just clean and sautéed. I only eat fresh fruiting bodies. Hope that helps, and thanks for watching.
Do you ever dry mushrooms and then grind them up into a powder for soups and flavoring other dishes?
Yes... that's a great way to utilize wild mushrooms. Black Trumpets come to mind with this method, dry, grind and put them in any dish... you can put them in the liquid you add when cooking rice. It's tasty however the black color can impart on the rice, depending on how much you use. Good question and thanks for watching. Happy hunting to ya!!

It’s hard to tell with the quality of the video, but how could you tell the light colored mushroom in the back was not a black staining polypoor?
The black staining polypore is more of a summer mushroom and does not typically fruit in October when the cooler weather comes... Hens only fruit in the cooler weather and the likelihood of both fruiting at the same time was very slim. You're right... the one in the back did resemble a black staining polypore... good eye and good question!! Thanks for watching and happy hunting to ya!!
There’s a really big one on a stump close to my house but it’s whiter than the ones I’m seeing online, it was growing in high weeds though, is there a lookalike that you can’t eat? Thanks, also, it’s the first week of July and it looks like this was made in the fall, I’m near Asheville NC, could they be ripe right now? Thanks.
It sounds like you have found the black staining polypore ( meripilus sumstinei) maybe... it's hard to say with out seeing a pic. Yes hen of the woods is a fall mushroom... Asheville will start seeing hens around the end of September or beginning of October. Thanks for watching and I hope that helps.

There’s several chanterelle looking mushrooms out there too, they are extremely yellow though so idk. Just bought a house in the smoky mountains last year and am too excited to learn this stuff. @@shanek6582 no worries... the yellow mushrooms could also be small jack o lantern mushroom (toxic) so do your homework... I would suggest just taking pictures only for the 1st year and maybe a spore print or two... if they are chanterelle mushrooms they'll come back next year. I would do the same thing with the polypore you found. Again thanks for watching and I hope that helps.
I have a question
I dehydrated all my hens in a dehydrator after I cleaned them. All of them are crispy dry. My last batch was late at night and there was a tiny bit of moisture in them it seemed. But I wasnt sure. I put them in a jar and closed the lid. The next day all of the other jars were crispy, the last one, yup... moist. Decided to re-dehydrate that jar full. Towards the bottom of the jar. The last couple inches or so of mushrooms, some of them clearly had grown some white mold. I threw them out. I didnt notice it on the rest of the jar. Should I toss them all? If there is a little mold on a few, will it die in the dehydrator?
Oh man that sux!!! I'm IICRC certified in microbial growth... which doesn't mean much except I understand mold growth and the damage it can cause. Mold is not our friend when it come to drying mushrooms... If it was my batch and I was unsure... unfortunately I would pitch it! It's better to be safe. Obviously something went wrong along the way and moisture was left in the mushroom. The question is how much and in when did it start... what batch? Will it die in the dehydrator? Maybe... It's hard to say without seeing it but just play it safe... pitch it all. I hope that helps and thanks for watching!! sorry!
Hey , i had a hen i left out over night and when i went to bag it i started hearing all this little popping sounds. when i looked closer it was these tinny little pore like white things..??? was it a bug or pores???
Wow! I've never heard any popping sounds before... I'm not sure whats going on... maybe it was bugs but maybe not... the spores are white but whats confusing is the popping sound. I've not heard nor have I heard of anyone being able to hear the spores being realest... very interesting. Did the white things move or float? You can barley see the spores on a good day... they typically look like mist when released. I'm just guessing when I say it must have been bugs. I know that doesn't help much but great observation!!! @@WildMeatLetsEat sorry, i was placing them in bags the sound was the spores (or bugs) hitting the side of the bag. very small and white, yes they looked like they were moving slightly. wish i had a microscope!!!

If you found it in early August... I'm guessing it was the Black Staining Polypore ( Meripilus sumstinei )they're edible but not choice... very chewy! You should Google search it and see if that's it... Hen of the Woods is a fall fruiting mushroom. I hope that helps, and thanks for watching!

Man I tell you I am very new at all this mushroom hunting and I have looked hard sense spring for some chicken or hens of th woods but haven't seen any dont know how well the grow in Louisiana I'm in old growth areas dont know but I'm going to keep hunting any tips on where to look would help!!
Old growth forests is perfect... the temperature for the hens are roughly 50 at night and 70 in the day. I'm not sure but this may be a November/December mushroom for you. You might have to look under 70 - 100 trees before you find one. Once you find one... take note of the location... it will come back year after year. Hens can be harder to find but stick with it... You should be able to find chicken in the spring, sumer and fall especially on old down logs (oaks) I would check FB to see if there any mushroom clubs/groups in your area... they will be posting pics of there finds and that should also give you a heads up on what is flushing in your area. Try this simple recipe
100ml white wine or cider vinegar
150 ml water
100g white sugar
10 black peppercorns whole
1 clove garlic sliced
1g fresh thyme
Put all together and bring to the boil but do not boil.
Poor over mushroom while warm
This also works well on thin slices carrots/cauliflower florets etc
Wait an hour before eating and keeps in fridge easily for one week.
