In 2:59 you shifted down because you are entering corner, you don't need to do that. Your bike was around 160 and if you shift down to 2nd gear you will have a lot of fuel consumption also a slow corner. Try to not shift down to 2nd gear until around the end of corner (only if your bike drops below 100) only sharp- hairpin turns require 2nd gear. For the rest you can keep your bike in 3rd
