- Earlier this week I had a couple, let’s just say, challenging sandwiches. Well, today we go out on a high note with the Cheese Dream Sandwich from A New Book of Cookery. I mean, it’s basically a thin grilled cheese sandwich but hey, I’ll take that over chopped raw oysters any day.

I find it interesting how these older recipes never specify the type of cheese to use.
If it doesn't specify, use farmer's cheese...
I think some of the books he's using for this aren't recording real regional recipes but are just some editor making stuff up to fill up the book. Cookbooks were a cool trend at this point in history.
It’s 1916, grocery stores as we know them don’t even exist yet. You went to the counterperson, told him what you wanted (often only one brand of each item). If you’re lucky, they’ll also sell meat and poultry of dubious quality. More often, you went to a butcher for that. And then onto a cheesemonger. By this time, you’re getting tired, maybe a bit annoyed, and monger only has one or two types of cheese; butter and whatever the locals ate.

I do like how it has that quesadilla texture. Not sure it's any more dreamy than any other grilled cheese item, but there definitely is something nice about the thin and crispy crunch.
Then I thought, wow. What if I made a cheese tiramisu with thin bread. Aaaand then I remembered that is just lasagna

Hey, I have a suggestion for a sandwich if you haven’t already made it. It’s the Chock Full o'Nuts Nutted Cheese Sandwich from the Chock Full o’Nuts diner. It’s a date nut bread (the recipe is online) with a cream cheese filling. My mom and grandma used to go there for the sandwich decades apart, and Lauren Bacall liked them too!
This one sounds like it will catch on!

I thought you were going to stack all three plussed up and eat all of them at once because all those bites at once sounds amazing.
Not only am I fond of this channel because of the Sandwiches but also because a lot of the plus ups just involve making the sandwich have more of a spicy kick.

My mum used to make me what were called 'cheese dreams' in a toaster oven. Bread with cheese popped in the toaster oven and then topped with a couple big slices of tomato. One of my favourites for after school snack or lunch! Thanks for unlocking those old memories of cheese dreams!
The "slice a slice" sounds like a weapon.
Of course a grilled cheese sandwich is the dream cheese sandwich.
There is a place in my city that does a "jalapeno popper" grilled cheese that's sort of a mix of all of your plus ups. I believe it has jalapeno, cream cheese, (maybe tomato?), and a raspberry jalapeno jam, all on a regular grilled cheese sandwich. It's absolutely fantastic.
I'll agree that any sort of grilled cheese is a dream! Dang, and it's lunchtime right now, too...
I've seen a variant of the cheese dream that is cheese and beet, and the one I was served as a kid was open-faced, with a slice of tomato and bacon under the broiled cheese top.

For a second I thought this was gonna be Ryan Long's recipe. There's a running joke on his podcast about the sandwich he invented with the same name, which is a piece of toast, processed cheese melted on top, and then cut up hotdog wieners.

I have read that currently the most popular sandwich in America is the good old Grilled Cheese!
Seems like the kind of sandwich that would make for an incredible substitute for bread. Two of those thin, crispy, cheesy treats filled with the plus ups or whatever.
I know it’s been done, but the thinner version feels a bit less over the top.

I'd like to see this guy do a mayo, peanut butter and bologna on white bread. Give it a go. It blends.
I would plus up with thinly sliced apple, that way I can put it inside the sandwich and keep the thin delicate style to the sandwich
It surprises me how often these old recipes call for "cheese" with no type specified. Arguably the most varied food in flavors and textures and they just call for..."cheese".

There's so few ingredients that most of the plus-ups kind of feel like cheating. Like at that point it's just a wholly different sandwich considering there was really only like a single ingredient differentiating it from a grilled cheese to begin with.
Shoulda popped the remaining bite of all three plus ups in your mouth at once, a triple decker grilled cheese, tomato, mustard, pickled jalapeno sandwich sounds like a winner to me.
I do not wear the cheese, the cheese wears me!

@ 2:00 OG 6. Mato+ up 7.5, DM+ up 8.5, PJ+ up 8. I think I would do sundried tomato and Italian seasoning. A Tomato Soup Grilled Cheese.

I'll be the one who says it: Once you go beyond bread and cheese its no longer a grilled cheese.
Outside of adding another cheese, adding anything fundamentally changes the sandwich.
