Hi Linda, I make my own gumbo also, you know our Dr. says we can’t eat the good stuff that we have ate all our life, but we can eat all the lettuce we want . lol as long as our gumbo has a wonderful taste from the meat we use, and all the onion we can stand along with a broth , and of course a big cast iron skillet of corn bread , we all are good cooks. Chicken and sausage gumbo is very popular in New Orleans, but no tomatoes and no leafy green vegetables. Also, gumbo is served as a soup, with a little scoop of rice; not as a gravy over rice. However, your stew looks delicious!
I beg to differ, Gumbo can be made with tomatoes added, and greens, not all chefs make it the same. And you can serve it over rice. I have never seen Gumbo served as a soup, always over rice.
One thing i cant do is boiled okra the slimy stuff is just not for me lol ...but i love fried okra and i love some fried squash or boiled squash with onions and butter so so good ....

Guys she made it her way by adding the tomatoes and spinach we dont have to do it that way she tweaked it how she wanted it .....we can continue to leave the tomatoes and greens out its simple shes.showing how she likes it ......
@@lindahouser9814 No true Cajun would ever put tomatoes in a stew or gumbo. Now maybe creoles from up north would But not here in south Louisiana. Not saying that what you cooked didn’t look good honey But that is not considered a Cajun gumbo here. No insult intended. Your cooking always looks yummy
Im from the heart of cajun country... NO tomatoes in gumbo... and also u didnt make a roux to start thats what gives it the deep rich flavor. I love watching your videos but this one was like wow .... i do get a kick outta watching people make gumbo saying authentic cajun gumbo
@@Dreamwoodhomestead2021 We make the roux at the start of the gumbo and then smother down those onions and trinity on a low heat first and then your kitchen already smells heavenly before anything else is added Never any tomatoes in a cajun gumbo. And certainly not spinach Gumbo is eaten like a soup over rice here. The roux is not as thick as a stew but browned real well
