The meat from the hind leg is more flavorful than the meat from the shoulder, but it is not as juicy. This is the first time I've seen a BBQ channel make pulled pork from a ham. How did you enjoy it compared to a shoulder? I've had it before this way and prefer it.

I've always wanted to buy a green ham to see what I could do with it. I want to try big ham steaks and maybe small roasts from individual muscles. I never would have thought of an overnight cook. I guess if you inject it with enough marinade and wrap in foil before it gets too dried out it would work. I just think that the picnic and Boston butt are naturally made for that long slow cooking. They will stay juicy without have to inject. I could see leaving all the fat and skin on a green ham and cooking it on a rotisserie. That would be like lechon, but on a smaller scale.

Haven't done an overnight cook as I'm afraid of... well.. everything... from burning the meat till burning the house down... but will give it a try... with a real Boston Butt that is 😁 BTW was surprised you didn't cook the sauce a little to thicken up... and that you didn't add kecap manis... man, that has people her going crazy since I started adding that to my BBQ sauce

The Hind Leg IS NOT THE BOSTON BUTT!!!!!!!!!! Boston Butt is Pork Sholder from the front of the pig!!!!!!!! The Hind Leg is the Ham! I for one do not want Ham cooked to be pulled pork! The meat will be considerably dryer than Pork Butt as it has substantially less intramuscular fat! For me, I would instead make a ham from the "HAM" and Pulled pork from the shoulder!
