    Just a note, Boston butt is the top part of the front shoulder. The back leg is the ham.

      It gets it's name "butt" from the size of the wooden barrel in which they came salted and packed for ships' provisions many years ago. A "butt" is two "hogsheads" and about 108 Imperial gallons. That's a lotta pork!

    The ham is a pig's hind leg (Prosciutto is from the ham). A Boston Butt comes from the shoulder of the front leg. The meat from the hind leg is more flavorful than the meat from the shoulder, but it is not as juicy. This is the first time I've seen a BBQ channel make pulled pork from a ham. How did you enjoy it compared to a shoulder? I've had it before this way and prefer it.

    Looks phenomenal. I've never heard of a 24 hour smoke for a smaller portion, such as a leg. I would definitely try.

    Roel, I have to say the exploding heads are right. That Boston butt is the shoulder blade roast. I expect you're just messing with everybody. And I, like you have done pulled pork from a bunch of cuts. Cool bear claws. Mine are plastic and miss that steel thing. Keep on grilling.

    I've always wanted to buy a green ham to see what I could do with it. I want to try big ham steaks and maybe small roasts from individual muscles. I never would have thought of an overnight cook. I guess if you inject it with enough marinade and wrap in foil before it gets too dried out it would work. I just think that the picnic and Boston butt are naturally made for that long slow cooking. They will stay juicy without have to inject. I could see leaving all the fat and skin on a green ham and cooking it on a rotisserie. That would be like lechon, but on a smaller scale.

    Hey Roel! That isn't a Boston Butt! Just in case you didn't find out from the other infuriating comments 🤣 But I loved the video. Haven't done an overnight cook as I'm afraid of... well.. everything... from burning the meat till burning the house down... but will give it a try... with a real Boston Butt that is 😁 BTW was surprised you didn't cook the sauce a little to thicken up... and that you didn't add kecap manis... man, that has people her going crazy since I started adding that to my BBQ sauce

    the hind leg does not have the boston butt in it. the butt is in the front shoulder. the ham is the cut on the hind legs.

      Yes. I think so. Pretty hard not to dry it out if it’s on the smoke for that long. Probably six hours or so maximum and then it starts turning into a meteorite

    Soooo, I will say one other thing. I have been cooking for close to 40 years and some of those years I was getting paid to cook in restaurants and by caterers. And not once did I do an overnight cook. I know it's a Southern BBQ thing, but it's really not necessary. I'm just being bitchy about it, I get that. But still.....

    The Hind Leg IS NOT THE BOSTON BUTT!!!!!!!!!! Boston Butt is Pork Sholder from the front of the pig!!!!!!!! The Hind Leg is the Ham! I for one do not want Ham cooked to be pulled pork! The meat will be considerably dryer than Pork Butt as it has substantially less intramuscular fat! For me, I would instead make a ham from the "HAM" and Pulled pork from the shoulder!
