Nice! I made a batch of smoked and a batch of oven roasted habanero sauce this year. Both are superior to my regular sauce. I grew like 25 habanero plants, so I had alot to experiment with.
I just did a batch but a little bit different. Before fermenting, I took about 10 chili's and slow roasted them. I chopped my garlic and roasted it in a pan. Mixed the roasted stuff with the rest of the chili's and fermented for two weeks. Fantastic flavor.
@BETSWITHFIST Thank you. It's should last a while. As long as the pH is lower around 3.7 like this one is, it will keep for many months. I've had similar sauces around 1 year before I finally used it all up.
