Sizzling pork ribs in claypot Ingredients: Pork ribs 2 lbs (already diced in cubes) Shallots 8 Nos. Ginger 1 No. Garlics 8 Nos. Green onion 1 No. Chili 2 Nos. Preserved beans 12 Nos. Potatoes (large) 1 No. (optional) Preparation: 1. Pork ribs, defrost in tap water. 2. Pork ribs, pour away water after defrost. Season with 1 tsp of cooking salt and 1 tsp of tapioca starch for 5 minutes, in order to make it more crispy. 3. Shallots, cut both ends. Get them peeled. Rinse with tap water. Ginger, get it peeled. Rinse with tap water. Garlics, get them peeled. Rinse with tap water. Green onion, cut the root. Rinse with tap water. Dice in cubes. Chili, cut the anchor. Rinse with tap water. Dice in cubes. Potato, get it peeled. Rinse with tap water. 4. Ginger, dice in small cubes. Potato, dice in small cubes. 5. Pork ribs, rinse thoroughly. Drain. Dry with kitchen towels. 6. Season the pork: a. Chili cubes (half) Cover up the pot. Turn to high flame. Pour 2 tbsp of Shaoxing wine alongside the pot. Cook for a minute. 8. Put chili and green onion cubes on top. 9. Complete. Serve.

啫啫排骨煲
材料:
豬肋骨2磅(切粒)
乾蔥頭8粒
薑1舊
蒜頭8粒
蔥1條
辣椒仔2隻
豆豉12粒
薯仔(大)1個(可以不用)
處理:
1. 排骨,清水解凍。
2. 排骨解凍後,倒去水分,加入粗鹽及生粉各1茶匙,乸5分鐘,令其更加鬆化。
3. 乾蔥頭,切兩端,去皮,清水洗乾淨。
薑,去皮,清水洗乾淨。
蒜頭,去皮,清水洗乾淨。
蔥,切去根部,清水洗乾淨,切粒。
辣椒仔,去椗,清水洗乾淨,切粒。
薯仔,去皮,清水洗乾淨。
4. 薑,切細粒。

5. 排骨,清水洗乾淨,擎乾水,用廚紙索乾。
6. 排骨調味:
a. 生粉1湯匙
b. 胡椒粉1茶匙
c. 蠔油1湯匙
d. 生抽1湯匙
e. 老抽半湯匙
撈勻。
7. 預備好煲仔。
烹調:
1. 大火在煲仔內燒熱油2湯匙。
2. 加入乾蔥頭、蒜頭及薑落煲爆香。
3. 加入薯仔爆香。
4. 加入排骨,炒勻。
5. 加入紹興酒3湯匙,轉中火,煮10分鐘。
6. 排骨,用筷子試一試能否被穿過。
7. 加入:
a. 豆豉(已洗乾淨)
b. 蔥粒(一半)
c. 辣椒粒(一半)
冚蓋,轉大火,從煲邊加入紹興酒2湯匙,煮1分鐘。
8. 灑上辣椒粒及蔥粒。
9. 完成,可享用。
Sizzling pork ribs in claypot
Ingredients:
Pork ribs 2 lbs (already diced in cubes)
Shallots 8 Nos.
Ginger 1 No.
Garlics 8 Nos.
Green onion 1 No.
Chili 2 Nos.
Preserved beans 12 Nos.
Potatoes (large) 1 No. (optional)
Preparation:
1. Pork ribs, defrost in tap water.
2. Pork ribs, pour away water after defrost. Season with 1 tsp of cooking salt and 1 tsp of tapioca starch for 5 minutes, in order to make it more crispy.
3. Shallots, cut both ends. Get them peeled. Rinse with tap water.
Ginger, get it peeled. Rinse with tap water.
Garlics, get them peeled. Rinse with tap water.
Green onion, cut the root. Rinse with tap water. Dice in cubes.
Chili, cut the anchor. Rinse with tap water. Dice in cubes.
Potato, get it peeled. Rinse with tap water.
4. Ginger, dice in small cubes.
Potato, dice in small cubes.
5. Pork ribs, rinse thoroughly. Drain. Dry with kitchen towels.
6. Season the pork:
a. Tapioca starch 1 tbsp
b. Pepper 1 tsp
c. Oyster sauce 1 tbsp
d. Light soya sauce 1 tbsp
e. Dark soya sauce 0.5 tbsp
Mix well.
7. Get ready for a claypot.
Steps:
1. Heat up 2 tbsp of oil at high flame in pot.
2. Add in shallots, garlics and ginger in pot. Fry well.
3. Add in potato. Fry well.
4. Add in pork ribs, fry well.
5. Add in 3 tbsp of Shaoxing wine. Turn to medium flame and cook for 10 minutes.
