Ever done an inside AND out grilled cheese? Make a standard grilled cheese, but while the 2nd side is toasting you put cheese on top of the sandwich, throw a lid on to let it melt, then flip it to get the cheese crispy. Repeat this for the second side, and you have crispy cheese on the outside and gooey cheese on the inside! The bread soaks up some of the extra grease, so it not as greasy on your hands as the one in this video.

I do something like this when making grilled cheeses, I'll spray the pan, sprinkle on a little bit of cheese, once the cheese is melted, i place the bread on, and make the grilled cheese like normal, the cheese on the outside of the bread gets crispy and adds a little extra texture to the grilled cheese

Bake the cheese and make sure it has a way for the grease to drain.and cook it at a lower temp. 2. Place on a paper towel. 3. You cooked it to high and long. Needs to be less crispy.

Thing is there's the same amount of oil as if you would put the cheese in the middle or straight into the pan. But I get that the feel is different and on the outside you have to now hold that. I've done it where I put less cheese and then after it's got that crispy layer you folded it in on itself like a traditional grilled cheese. That turns out much better
I've done this before and it was great. You did it wrong. Not sure what cheese you used but I'm thinking you used the wrong cheese. The bread looked great, though it should have had some mayo or honey in the middle. That's what I do and I love it!
I have a better idea put cheese between the bread and then do the cheese wrapping part but add cheese after you cover the bread so its fully sealed 2 bread on the gilled cheese covered in cheese and then you could enjoy it or you could wrap that with cheese fully sealed the outer layer of bread and repeat I call it the grilled cheese to the power of however many layers you do tyler do my idea.

Honestly, I tried this, and if you use regular white bread and make sure the cheese is nice and thick, this would be good. IMO I used wheat bread, but the taste wasn’t right. I think if I used regular white bread, it would be better.
I've since this technique used for a breakfast sandwich, but they used eggs instead of cheese and folded it the other way with bacon in the middle. It turned out really well.

yeah keep the bread on the outside. it would absorb more of the oil making it less greasy to taste. you want to do this on high heat and fast. to create the crust faster but not make the whole cheese crusty. flip and fold abd you have your grilled cheese, sandwich.
Definitely a thing made for the gram. If you put a couple strands of grated cheese under the buttered bread when frying it, it does crisp up nicely and accentuate the final sandwich-with cheese melted in the middle, the way it's supposed to be.

Go for the mexican costras version where you do the same with the cheese but then you put it in a taco. So much better in terms of consistency and eating experience.
Would likely be better if you toasted the bread dry, then when scooping the cheese bottom off the pan fold it so the non-greasy bread (toasted dry) would be on the outside.
Probably better to take bread on the pan side by side and put extra cheese on top. Then close the lid to steam the cheese a little to melt it then pull it off and fold the breads together. Cuz the cheese would stay really soft and consistent. Probably better for a BBQ grill or a oven you can put a pan in.
Better version, you throw down a mound of cheese in the shape of the bread slices your using, immediately apply the bread to the top of the melting cheese, and keep it there, scooping any escaping cheese back under the bread. The moment you feel heat coming through your bread, it means the cheese has likely melted to it. THEN you flip the bread side onto the pan, using the grease from the melting cheese to taste it, meanwhile you have this crispy layer of cheese that was against the griddle, but still have a proper gooey layer of cheese as well. Two, once you push the two halves of the sandwich together, if you used two piles of cheese. And why wouldn't you?
I started doing something similar last year but with just a little bit of cheese after I make a normal Grilled cheese to get a bit of a cheese crust on both sides and it is a game changer.

Simple modification idea to make this less oily and more classic Toast one side of the bread, remove and add cheese like you did. But then put the bread into the cheese, toasted side down and fold the crispy sides of the cheese inward to make a crispy center of a normal grilled cheese and finish by searing the outer pieces of bread. It is more like a classic grilled cheese but with a crispy center crunch. Honestly, thought thats what this was goint to be. Cheese on the outside is kinda dumb because of the problem you had.❤

i do recommend put it on a plate of paper kitchen towels. to absorb all of the excess oil.

I feel like it would be better if you flipped in the other way and folded the cheese inside the bread. I’m probably going to try this sometime soon just to see if it is any better.
Cheese crisps are delicious, but I wouldnt use oily / medium age cheese. Maybe..
Just sharp cheddar, half as much cheese
Peel ot off the pan without flipping
Let it rest on a paper towel
Fold it in half with grilled bread on top
This will need some experimentation
Flip it backwaeds and you got a griled chese with bread on the outside lol

Honestly, I tried this, and if you use regular white bread and make sure the cheese is nice and thick, this would be good. IMO
I used wheat bread, but the taste wasn’t right. I think if I used regular white bread, it would be better.
I've since this technique used for a breakfast sandwich, but they used eggs instead of cheese and folded it the other way with bacon in the middle. It turned out really well.
The better way to do this would be to butter the bread and put it down first. Then the shredded cheese on top, All around the same as before. Then fold it and you’ll have the cheese in the middle and can hold the bread. You can also add other stuff on top of the cheese like bacon or ham
I think the better way to do something similar to this would be to put the cheese around the bread, then fold over the crispy cheese and fold the slices together.

Try putting a smaller circle of cheese in the pan, and then putting cheese between the bread slices.
THE BEST way is to make a regular grilled cheese and just before it’s done sprinkle a little cheese on the outside on each side until it’s crispy.

yeah keep the bread on the outside. it would absorb more of the oil making it less greasy to taste.
you want to do this on high heat and fast. to create the crust faster but not make the whole cheese crusty. flip and fold abd you have your grilled cheese, sandwich.
Definitely a thing made for the gram. If you put a couple strands of grated cheese under the buttered bread when frying it, it does crisp up nicely and accentuate the final sandwich-with cheese melted in the middle, the way it's supposed to be.

Go for the mexican costras version where you do the same with the cheese but then you put it in a taco. So much better in terms of consistency and eating experience.
Why didn’t you flip it inside out so the fried cheese was in the middle before you ate it?
Would likely be better if you toasted the bread dry, then when scooping the cheese bottom off the pan fold it so the non-greasy bread (toasted dry) would be on the outside.
Generally cheese is oily if you use cheaper quality cheeses…try it with the good stuff from a cheese shop.
Probably better to take bread on the pan side by side and put extra cheese on top. Then close the lid to steam the cheese a little to melt it then pull it off and fold the breads together. Cuz the cheese would stay really soft and consistent.
Probably better for a BBQ grill or a oven you can put a pan in.
How about instead of reversed you do it like an egg sandwich and keep the bread on the outside.
Better version, you throw down a mound of cheese in the shape of the bread slices your using, immediately apply the bread to the top of the melting cheese, and keep it there, scooping any escaping cheese back under the bread. The moment you feel heat coming through your bread, it means the cheese has likely melted to it. THEN you flip the bread side onto the pan, using the grease from the melting cheese to taste it, meanwhile you have this crispy layer of cheese that was against the griddle, but still have a proper gooey layer of cheese as well. Two, once you push the two halves of the sandwich together, if you used two piles of cheese.

I have a ground breaking idea..... What if you fold the grilled cheese inside out to make a grilled cheese . Remarkable.
I started doing something similar last year but with just a little bit of cheese after I make a normal Grilled cheese to get a bit of a cheese crust on both sides and it is a game changer.

The people who sell Mexican food across from my building do this technique for their quesadillas and it is PHENOMENAL!!
Yeah whoever "created" this wasn't too smart. They could have put more cheese in it after the crisp part and had 2 textures of cheeses in 1 sandwich.
There's a reason why a sandwich is two pieces of bread with things inside and not the other way around. It's a basic formula because it works. There's no need to fix what isn't broken
My wife has been doing this for twenty years at least. The key is to use a less greasy cheese. She likes a low-moisture shredded mozzarella. It goes great with tomato soup.

Although I agree that this sandwich is somewhat oily, the cheese in the original version is creamier, more melted, and less dry and overcooked than in this one, which made the comparison feel unfair.
Why not fold the cheese inward instead of outward?
Simple modification idea to make this less oily and more classic
Toast one side of the bread, remove and add cheese like you did.
But then put the bread into the cheese, toasted side down and fold the crispy sides of the cheese inward to make a crispy center of a normal grilled cheese and finish by searing the outer pieces of bread.
It is more like a classic grilled cheese but with a crispy center crunch. Honestly, thought thats what this was goint to be. Cheese on the outside is kinda dumb because of the problem you had.❤
I accept that's probably delicious, but ... the point of bread/sandwhiches is that the bread is a barrier for the hands, a delivery mechanism of what's between the bread...
why don’t you put cheese in between the slices once you put the bread back into the melting cheese then let it sit after folding for a minute so the inside cheese could melt.
Probably work better if you folded the cheese inward or just use one slice with cheese on one side. It's like the Lightyear sandwich problem.
