Either way, Joplin's Maple Leaf Rag was still out for the second game's timeframe and the song is not a 1910-1920 song. It's actually one of Joplin's earlier rags from back when he still had his chops and wasn't ill.

If I had to guess, I think they probably motion-captured an actor playing the actual song, but the animation didn't line up with the in-game assets.

You should do “The Music Lovers”. Not animated, but there are plenty of scenes that look a little off.
Even you got "what he played" wrong, because near the end his right hand jumped up over an octave but you didn't move up at all.
