If I’m doing ham or bacon I’m doing pineapple because pork goes well with something acidic and sweet but never with chicken or beef. Pepperoni is also a no because the spices do play well with the pineapple. As far as tomatoes I don’t find the point to it because if the sauce it right you won’t need them but a dry sauce will definitely be begging for something juicy, if that’s the case I go pineapple and pair with bacon and jalapeño.
