Sardines/Kapenta, how to prepare dry siavonga sardines 🍅🍅🌶🥘🍛🐟🐟

  • In Zambia we have two types of sardines that i know which are Mpulungu sardines and siavonga sardines.
    Back in high school my teacher of geography tried to explain to us that these two sardines are actually the same species, the reason why they seem different it's because of the different rivers and what they both feed on is different.
    And come to think of it it actually true. Next time i will take pictures of both and show you guys.
    Ingredients
    Two handfuls of Dry Sardines
    1 medium Onion
    1 medium tomato
    salt
    5 tablespoons cooking oil
    Method
    Wash the sardines in warm water, just one wash is enough do not keep them in the water for more than 7 minutes.
    Heat up a pan and add the cooking oil
    Add the washed sardines
    Add salt
    Keep turning it with a spoon for 10 to 12 minutes.
    NOTE: do not leave it to cook on it's on as it may burn.
    So you have to endure turning it for upto 12 minutes non-stop.
    When it is cooked and turns golden brown add the onion.
    After 4 minutes of adding the onion you can now add the tomato. let the tomato cook then smash it and mix well with the sardines.
