    This is a perfect recipe.
    This is easy and turns out perfect. I used tofu because I cannot get Queso Fresco in Canada. It is still pretty amazing. The only thing I could add is to sweat the peppers for ten minutes or so inI a plastic bag , after you roast them and peel the skin off.

    For those of you with a hankering for the true queso fresco of Sonora, you can substitute feta cheese.
