Thank you very much. This is the most user friendly explanation of tags I have found.

Thank you for the video. I'm trying to organize tags by putting them into folders and it's a PITA. Trying to drag them up or down in a long list into a folder just shows a circle with a line through it and is impossible. For such a widely used program, I'm shocked that this functionality isn't just automatic.
Update: Ok, choosing the default tag first and then moving works better.

Good video! Here's some tips from some of your video suggestions:
How to tag elements (groups or components):
For most cases when it comes to tagging groups or components, the best way is to do as little work as possible. In your video, a better way to tag your interior walls would be to keep all of your interior walls as one group, inside that group all interior walls would be raw geometry. Simply tag the interior walls group now with the interior walls tag and you're done. Now if you want to move interior walls up or down, go into an elevation view, select the top of walls or bottom of walls with select tool and move to height. You can also use the stretch tool for this and it won't distort walls going up or down vertically on the z axis.
Why to add tags and how many:
Adding tags should happen for two reasons typically, either to use tags for efficient modelling via using scenes in sketchup, presentations in sketchup, or to control how the model is sent and shown in various layout viewports and viewport overlays with custom tag visibility. If tags are not serving any of those purposes, than they are useless. I use around 120 tags, in an extremely simple naming convention I've created. When I want to make complex layout drawings from my model, when I was starting my business and setup my taggin structure, I knew what I wanted to control in layout, for instance seeing a roof and making it hidden in layout with a long and thick black dashed line style. By creating an appropriate tagging structure in sketchup, and setting up template viewports in layout, once it's done, I don't have to worry on any future projects, I simply draw and layout will show or hide, or my sketchup scenes will show or hide what I want and how I want it. The amount of tags I have is due to the various drawings with custom elements or line thicknesses that I want to display, so I have that many tags because I have that many conditions. Again, once it's setup, I don't have to make my system anymore, I just draw in sketchup and my project is ready to be labelled.
    Adding too many tags:
Adding many tags does not slow down the sketchup model, not anythign noticeable anyways. When scrolling through the tag window with many tags, the tag window in sketchup will lag, that's really the only thing that slows, down, even this is going to be improved though....
I know all the players and a lot about the two programs. If you want to get better at sketchup and layout and see it's true power, I'd be happy to help you save some time and develop better modelling practices that will save you time and hastle.

Gahhhh. Why are so many dumb tutorials at the top of RUclips search? Where are the good, professional tutorials demonstrating proper workflow?! So few comments and they're always people explaining how to do things better. Someone please make a good windows sketch up tutorial series!! :(
