I'm someone who does not like salads, but I do love sweet potatoes, and I've been trying to eat more vegetables, so this seemed like something to try. After making it with a few minor adjustments (pecans instead of walnuts, no onion and no cranberries because I didn't have those on hand, added some chicken for protein) I have to say that this is truly a fantastic dish. I barely noticed the salad with the crunch of the nuts, and the roasted sweet potato made the sadly pretty filling while adding a mild sweetness. The dressing was also really great in how it was lightly sweet, but mostly tangy and acidic in a way that was well balanced and complimented by the avocado and sweet potato. I'm so glad to have found a salad that I can actually be excited to eat
I am trying your recepies and they are all so easy and delicious. Being a vegetarian sometimes it is difficult to look for flavor. But you made it all easy. So, thanks ❤
I would have named this "Salad WITH roasted sweet potatoes" so people wouldn't be confused thinking your talking about a Sweet... Potatoe salad instead of a Salad With sweet potatoes on it lol
