귀여운 연유 모닝빵 / 귀여운 빵 만들기 - Soft Condensed Milk Bun - Hand Knead

  • Condensed milk bun that will turn out very soft and yummy.
    Let's get started!
    Ingredients: (pan size 20x20x5cm)
    250gr bread flour
    4gr instant dry yeast (i'm using saf gold)
    4gr salt
    40gr sugar
    25gr condensed milk
    180gr milk
    cheese filling:
    30gr grated cheddar cheese
    15gr condensed milk
    (mix altogether until soft)
    chocolate filling and ganache for eyes:
    20gr dark chocolate
    10gr heavy cream
    (microwave for 30sec and mix until all are well incorporated)
    Steps:
    1. Mix bread flour and all other dry ingredients (salt, sugar, dry yeast) in mixing bowl, and then add condensed milk and milk, mix until forming a rough dough.
    2. Move dough on the flat surface and start kneading in a dough-stretching gesture until the gluten is formed and strong.
    3. Add butter, and continue to knead until the butter is adsorbed, and then continue to throw and fold the dough until it become elastic.
    4. put the dough back in the bowl, cover with plastic wrap and leave for 1-2hours (until doubled in size)
    5. After the dough is getting twice biggeer, slowly press and knead the dough to release air, and then divide the dough into 2 parts, take 1 part and mix with cocoa powder to color the dough chocolate
    6. divide each part into 8 parts (total 16 small balls), it will be around 31-32grams each ball, roll the ball, don't forget to prepare the ear for the bears, and beak for the duck (30gr for head, 2gr for ears)
    7. After all the balls are formed, leave to bench rest for 15 minutes
    8. After 15 minutes, move dough into the pan, press the dough flat so you can easily fill the filling inside, pinch the dough and continue to roll until smooth, add the ears for the bears and beak for the ducks, repeat until all doughs are done.
    9. Cover the pan with plastic wrap and do the second fermentation for 40-50 minutes or until the size is twice bigger.
    10.After 40-50 minutes, uncover the wrap, bake in preheated oven 150C for 20 minutes
    11. Move into cooling rack and let cool.
    12. Draw the eyes and mouth by using the chocolate ganache.
    13. And it's done!
