Thanks for your questions. Short black is an espresso, that is correct. With a long black you put the hot water in the cup first, so you get a bit of a crema when the espresso shot goes on top.

It would be great if you could split yourself into two people and send the other person here to Taiwan. There are no Baristas like you here; not even close! 90% of them don't ever engage with customers at all; they serve as robots. Probably because they don't really have to; when customers make orders they look into their phones; a digitalized society that forgot how to socialize. Nobody watches a beautiful process of a barista making coffee.

I would love to go to Taiwan one day, I spent over 8 years in Asia, but unfortunately never got there. And you are right about too many people being glued to their phones, but when I work I usually try to engage with them anyway, so they lift their eyes for even just a minute and interact with a real live human.
