The problem is they are asking Java too deep for tester that they actually don't required ,as testers are mostly non tech background... It's hard to crack Java interview due to intense programing questions

If your web service doesn't have any UI or interactive elements,go for API testing. If it has elements like images,titles etc which are interactive then use selenium. Using Java is optional, selenium supports various languages
