The reason for the name hokkien mee is it was named after the dish created by the Fujian descendants in Penang. Same goes to the KL version. In Penang we also have the fried hokkien mee but we called it Hokkien Char instead of hokkien mee. Char means fry. The Cantonese speaker in KL also called it Fukien Chow. You can make the hokkien mee at home but of course it takes a lot of effort. The broth was made of prawns head. Blend it into very fine paste and bowl it with a pot of water along with pork bones. But do we cook at home? Not really. Just like the Japanese prefer to eat ramen at shop instead of cooking ramen dish at home. Unless for special occasions. Btw, we dont put the garlic on hokkien mee. It actually for loh mee, the one with the dark broth 😅 I just remembered that you already try asam laksa. But do you know asam laksa is actually originates in Penang and Kedah? So why don't you try again and compare is there difference?
For the Loh Mee you have to put in the garlic. Chili is up to you on how spicy you want. Is is an acquire taste and not everyone can accept the taste of the thick sticky soup. With mix you get a slightly thicker soup and the less prawn noodle taste. Good for people who thinks the prawn noodle soup has a too strong taste.
