on vacation in Croatia I bought them fresh from market, kept shells and heads, made stock from butter, little shallots and the leftovers from prawns, really delicious! EDIT: almost forgot, after I fried shallots with leftovers from prawns, I added white wine ( it's best to use local wine), let it evaporate and add water :-)

Somehow my prawns lost lot of fluid in the marinade, so after the BBQ they were quite dry, even before the bacon was crispy. Next time I won't add any salt. The herbs and especially the bacon dominated the taste. I really like the watermelon / feta / lemon / herbs Salad ... Very refreshing on a hot summer evening.
That, is *stunning.* And I've had griddled sweet chilli Giant Prawns before: that sweet, meaty crustacean flavor at it's finest. So can only imagine how good those will taste!! 💫🤯🥳

Tip: don’t throw out the heads or shells. You can make fish stock for gumbo or Bouillabaisse with them.
