Very nice and informative video, ma'am, as always. IMHO, French press really does need longer brewing time to make stronger brew to match moka pot's concentrated espresso-like result.
I have only ever brewed up to 5 minutes or go for the cold brew. Next time I will try to brew longer and see how it goes. For recipes with milk I usually go for stronger roasts - even a blend of arabica and robusta to get a well-balanced taste.
I would not profess to know but I would say they use a stronger coffee to water ratio to create a concentrated brew. Using 1-2 tsp of brewed coffee for a cup of milk or water does not sound realistic to me. They must use a very special extraction process.
