It was an honor, don't get me wrong, he was kind of a dick, but everything he said was 110% correct, as well as from the heart. I am so happy I got to meet him before.... I have to say tho, I'm Italian and here many people just don't care about learning more than one language. You get to study at least 2 at school, (usually English and a third between french/Spanish and German) but very few actually study and remember anything PSA: if you ever come to Italy ask younger people to help you whenever you need, your chances of actually getting helped are much higher
Yes, it is the best pizza in the world. I had it when I passed through or more like got lost and ended up in Calazzo about 7 or 8 years ago. Still can’t get it off my mind and my palate. I had pizzas all around the world and Italy but nothing really beat them. The bread from their bakery are also super awesome.

I used to love pizza hut when they 1st come to Indonesia back in the 80s but i don’t know if u were old enough to eat pizza then. However during my backpacking days in Europe for 3 months I discovered the authentic Italian pizza both the thin crust and the thick bready crust. When i said that i’ve tasted pizzas around the world, i literally did from the cheapest imitations to the most expensive ones. So there aren’t that many places that impressed me like places in Italy, Japan & Dubai. Pizza’s humble beginning as bakers treats for the poor is still the best thing i’ve ever eaten. Although I’m Indonesian by birth w/ chinese heritage, i enjoyed wheat products more than rice. So i can say that it was and probably still is the best pizza in the world. You are entitled to your opinion as am I to mine.
5:06 that's not "The Pizza Margherita" that is called "Margherita Sbagliata" (wrong margherita), it's called like that because it tastes like a Margherita but it doesn't look like one. It was the first pizza I tried there and it is absolutely amazing.
im glad i stumbled upon your video, im italian from napoli and yes we all know the great Franco Pepe, his pizzeria is in fact the michelin star of all pizzerias, but there is better news for people living in the UK, there is a pizzaiolo who worked and trained under the masterful eye of Franco creating pizzas in a small seaside coastal town city called folkestone, the pizzeria is called Roka Pizza and the chef pizzaiolos name is giorgio cristafaro who was with franco pepe for 4 years , the pizzas there are magnificent, it truly is an experience to see and taste such beatiful food created by these masters.

I think you don't know what you're talking about. It's so easy to make a shitty pizza, even a little mistake is enough to ruin everything: excellent ingredients are the standard in 90% of Naples' Pizzerias, but only few do a great pizza like Sorbillo, Starita, Da Michele or Pepe do.

mostly because the smell of something is actually the crepuscular particles entering your nose and being identified/experienced by it, while sound and light are waves and thus can be mimicked a lot more easily by vibrating frequencies. simply put, smell is particles, vision and sound are just vibrations
For a while in the history of cinema, something similar was tried, in that smells would be introduced into the theater occasionally. It would be a double-edged sword I think!
Authentic Italian food was the biggest disappointment of my life. Italian Pizza tastes bland, the sauces they make taste bland, everything I ate there tasted bland and they really overuse wine in their foods and not properly either. Thankfully Spain and Greece made my vacation worthwhile.
@@mackjeez even an entrecote tastes bland in comparison to a mcdonald hamburger....there is a big difference between "tasty" and "spicy". Most of the time strong spices are used to cover up bas taste

This video genuinely made me tear, because pizza and food in general is so culturally rich, so much about love and passion that it brings my origins and memories back up. The passion of Pepe in Grani is truly touching and what he does is simply art. Seeing you closing your eyes and using so many superlatives about the iconic food of my country was so heartwarming. I live 20 minutes from Napoli and I've tried hundreds, or maybe thousands of pizzerie, and no one beats Pepe. I go there whenever I can, at least once every two weeks, and it's always amazing like the first time. Great video Alex, bravo!

It depends for the ingredients quality, the water, the flour (not one maybe but mixed in percentage), the pomodoro sauce (born in the vesusio terrain), the mozzarella fiordilatte / bufala, the oven they used and of course the experience they got for 3 generations. Trust me you must go there 1 time in your life :), this year i hope i can go with my girlfriend, he's from Naples, the life is one!

I was in pepe in grani and ot was definately the best pizza experience in my life! Ps: Franco Pepe is a culinary badass. I was in kitaly wich is the pizzeria open by his ex sous chef in Geneva and is quite good too. Caiazzo stays the best anyway! Thx for the video

Make a "pizza base" from cauliflower..., yes cauliflower. (there are heaps of recipes on the net and I have tried a few..., and NO the pizza doesn't taste like cauliflower). Put on your sauce, your choice of toppings and cheese, (which can ALL be bought at your local supermarket) bake it in your oven on at least 230C (450F) for aprox 10 min or until the cheese starts to go golden coloured. (I start it off on a piece of baking paper for about 5min then slide it off directly onto the rack to finish it off). Yummmm.

The waiter called it "Margherita Sbagliata" which means "Wrong Margherita": The reason why it's called this way is because the mozzarella is used in the same quantity as the tomato sauce in the original margherita and viceversa for the tomato sauce. Greetings from Italy!

Hi Alex, I’m italian so I’ve tested a lot of pizzas. The one made in Pepe in grani is one of the best for me. Franco pepe makes the experience of eating pizza a trip into different places and times, you can feel the old traditional flavours because he uses only typical products from the region but also the new wave of a modern cuisine. To directly and simply address the last question you made, by the end of the video... Alex, I think it all comes down to personal preference. Do you prefer crispness, or softness, light and stretchy, crunchy and slim... one simply cannot tell. A lot of pizzas can be AMAZING pizzas, but we can't really say that one is above all the other. And you really can't judge a pizza place by its location. I'll give you my personal favorite (along with the experience): Termini train station in Rome... I ate 5 pizzas with my girlfriend all across Rome, but our favorite (and best yet) was in the Termini train station. It was light, with a slim base, and puffed-out-hollow edges, but at the same time, soft as a fresh pillow... it made me cry... it was amazing. That being said, I hope I shined a tiny shred of light on the answer that you are seeking. P.S. I love your work, and as a person passionate about the art of gastronomy, I really reflect on your energy and enthusiasm about cooking. Best regards !

Well, we definitely think it is the best. Did Franco show the vessel where the dough develops. His dough looks positively radioactive! While not quite as good as Franco Pepe, 50 Kalo and La Notizia are great too. (And better than some of the other places you have been which we will not name.)
Pizza extremists from Naples would probably say that these weren't pizzas, but food is mainly about innovating and pleasing people IMHO. You seemed pretty pleased and these were surely innovative ! Now I want to go there and try it..
Alex actually seems like he doesn't want to offend any extremists, and doesn't say it's the best pizza or pass a judgement on that question. He's clearly enjoying it though. It's a tough tightrope! You have to earn a lot of stars from the pizza elite before you can be allowed to experiment and still be in the group.
till he do not mess up toppings and keep same name, no one will complain, he can and is calling his pizzas with unique names. if he takes margarita and add pepperoni or mashrooms on it and still call it margarita, he will be crucified for sure...
Actually no, Nepolian pizza extremist like Pepe in Grani, some may disagree that maybe it's not the best but they still love it, keep im mind that Caiazzo is near Naples and Pepe in Grani's pizza is in fact Neapolitan pizza. It's considered the best pizza in the world for mainly three reasons: Franco Pepe uses the best ingredients, he's extremely creative and he cares so much for pizza that he almost treats it like it was a baby.

I think it's because the waiter said: "margherita sbagliata"; which means mistaken margherita. So the name explains why it is not a traditional margherita. That's why i wouldn't call it a deconstructed pizza either.
That's not true. The Margherita sbagiata is the deconstruction of a Margherita but all the pizzas they ate is called "Degustazione" degustation means if you go to eat at Pepe in grani and ask for the "degustazione" they will start to carry pizza till you don't stop them. I do believe the waiter just wrongly hear what Alex were try to say.

I went there with my (French) woman after seeing this video. We ordered 3-4 pizzas each (we took half of each home, it was too much to eat in one sitting but there was too much choice to only have one), plus desserts. It really was incredible! 😊

It's been a bit rough on my journey, sometimes it feels like i'm potatoes/pineapple on pizza (Not supposed to be there xD tho Pineapples on pizza is the bomb!) but after watching these types videos, it really helps to boost my morale/inspire me to explore beyond my current abilities :D

@@Botclose40 Hi, i'm Italian, and i can say you cant make the same and also nothing that can be compared to be honest. It depends for the ingredients quality, the water, the flour (not one maybe but mixed in percentage), the pomodoro sauce (born in the vesusio terrain), the mozzarella fiordilatte / bufala, the oven they used and of course the experience they got for 3 generations. Trust me you must go there 1 time in your life :), this year i hope i can go with my girlfriend, he's from Naples, the life is one!

After seeing that, I HAD to go to Il Vesuvio, the pizzeria near my house, where the guy is ranked #434 in France, #5859 in Europe, #19 673 in the world. And it was extremely satisfying.

Make a "pizza base" from cauliflower..., yes cauliflower. (there are heaps of recipes on the net and I have tried a few..., and NO the pizza doesn't taste like cauliflower).
Put on your sauce, your choice of toppings and cheese, (which can ALL be bought at your local supermarket) bake it in your oven on at least 230C (450F) for aprox 10 min or until the cheese starts to go golden coloured. (I start it off on a piece of baking paper for about 5min then slide it off directly onto the rack to finish it off). Yummmm.
Until then, we have that one frozen plate resembling dough with some cheap tomato sauce and tasteless cheese. And that is if you can even find it.
theres plenty of gluten free options nowadays, it just wouldnt taste the same :/

The waiter called it "Margherita Sbagliata" which means "Wrong Margherita": The reason why it's called this way is because the mozzarella is used in the same quantity as the tomato sauce in the original margherita and viceversa for the tomato sauce. Greetings from Italy!

Hi Alex, I’m italian so I’ve tested a lot of pizzas. The one made in Pepe in grani is one of the best for me. Franco pepe makes the experience of eating pizza a trip into different places and times, you can feel the old traditional flavours because he uses only typical products from the region but also the new wave of a modern cuisine. Great great videos french guy!

To directly and simply address the last question you made, by the end of the video... Alex, I think it all comes down to personal preference. Do you prefer crispness, or softness, light and stretchy, crunchy and slim... one simply cannot tell. A lot of pizzas can be AMAZING pizzas, but we can't really say that one is above all the other. And you really can't judge a pizza place by its location.
I'll give you my personal favorite (along with the experience): Termini train station in Rome... I ate 5 pizzas with my girlfriend all across Rome, but our favorite (and best yet) was in the Termini train station. It was light, with a slim base, and puffed-out-hollow edges, but at the same time, soft as a fresh pillow... it made me cry... it was amazing.
That being said, I hope I shined a tiny shred of light on the answer that you are seeking.

Well, we definitely think it is the best. Did Franco show the vessel where the dough develops. His dough looks positively radioactive! While not quite as good as Franco Pepe, 50 Kalo and La Notizia are great too. (And better than some of the other places you have been which we will not name.)
Pizza extremists from Naples would probably say that these weren't pizzas, but food is mainly about innovating and pleasing people IMHO. You seemed pretty pleased and these were surely innovative ! Now I want to go there and try it..
Alex actually seems like he doesn't want to offend any extremists, and doesn't say it's the best pizza or pass a judgement on that question. He's clearly enjoying it though. It's a tough tightrope! You have to earn a lot of stars from the pizza elite before you can be allowed to experiment and still be in the group.
till he do not mess up toppings and keep same name, no one will complain, he can and is calling his pizzas with unique names. if he takes margarita and add pepperoni or mashrooms on it and still call it margarita, he will be crucified for sure...
Actually no, Nepolian pizza extremist like Pepe in Grani, some may disagree that maybe it's not the best but they still love it, keep im mind that Caiazzo is near Naples and Pepe in Grani's pizza is in fact Neapolitan pizza. It's considered the best pizza in the world for mainly three reasons: Franco Pepe uses the best ingredients, he's extremely creative and he cares so much for pizza that he almost treats it like
it was a baby.

I think it's because the waiter said: "margherita sbagliata"; which means mistaken margherita. So the name explains why it is not a traditional margherita. That's why i wouldn't call it a deconstructed pizza either.
That's not true. The Margherita sbagiata is the deconstruction of a Margherita but all the pizzas they ate is called "Degustazione" degustation means if you go to eat at Pepe in grani and ask for the "degustazione" they will start to carry pizza till you don't stop them. I do believe the waiter just wrongly hear what Alex were try to say.

I went there with my (French) woman after seeing this video. We ordered 3-4 pizzas each (we took half of each home, it was too much to eat in one sitting but there was too much choice to only have one), plus desserts. It really was incredible! 😊
