Kobeni chose to come and look for that fight. That's the difference. In the hotel the fight was pushed on her and she was stuck (possibly without her devil contracts but we don't know for sure), in a situation that was more psychological torture than physical and with no apparent solution until the devil tried to push her to kill Denji.
You can still see that Kobeni is the same person, she went for ruthless pragmatism both in the hotel (killing Denji being the obvious immediate solution no matter how morally dubious) and in this attack (no hesitation to both murder an old lady even though she probably didn't really need to, and literally using Denji's body as a shield). The only real variation is the degree of freakout which is caused by the aforementioned differences in those situations.

Hello, here are the explanations of the moments from episode 12 (no spoilers). 1) Here we saw the katana man starter, namely that he takes off his hand, unsheathing his katana, which turns him into his hybrid form.
