    Almond shortbread
    Ingredients
    125g butter
    75g caster sugar
    125g wholemeal rye flour
    125g ground almonds
    Method
    STEP 1
    Line a 20cm square tin with baking paper and preheat the oven to 170c/150c fan oven/325f/gas mark 3.
    STEP 2
    Put the butter and sugar into a bowl and beat together until light and fluffy.
    STEP 3
    Mix in the flour and almonds and using your hands bring everything together into a dough.
    STEP 4
    Add the dough to your tin and press out to the size of your tin until smooth
    then using a fork poke some holes all over the top pressing through the dough.
    STEP 5
    Cut across the dough to form 18 fingers 3 across and 6 down.
    STEP 6
    Bake for 40-45 minutes remove from the oven let cool in the tin and carefully cut through the shortbread.
