      You know I was going to take my large steamer to goodwill a while back. Not using it now that the kids are grown. Then I saw a pepper show where one was used to rehydrate meats,etc. I kept that hydrater...they don't make them as good these days so it is a keeper.

    Now that you have me teary eyed with what you said about your mom ot makes me miss mine. Have to make something she use to make and have more of that feeling tonight. I'm also hungry now for corned beef just glad I have some in my cabinet. Thank you for your memories your tears ... that I'm also feeling right now. It's exhilarating. Another great video.       My wife cried also while we're watching you remembering your mom. The 2nd cabbage looked much better. Now we want to dehydrate some cabbage too. We learn a lot of things from your channel. More power.

    Add some crushed sautéed potatoes, chop in the cabbage and corned beef..... excellent bubble and squeak. I used to work on a farm during the summer months to keep me out of bother. We always had this for breakfast on the farm in the UK... long time ago now!!!

      I have been wondering too 😃. My family actually loves cooked cabbage and I’ve been wanting to preserve it but not turn it all into sauerkraut. Now I know I can dehydrate it.

    Dehydrated cabbage is fabulous. I use it as salad, soup or casserole toppings, snacks, lightly sauteed with onions & garlic in a bit of butter and stock. It goes into my meal in a jar. I nver have parboiled but will now give it a try, with the pinch of soda. Which is how I dehydrate celery. I usually dry green but occasionally purple cabbage, just for fun color. No freeze dryer, but it works beautifully in Excaliber dehydrater.

    Just a suggestion Pam, I’d heat the corned beef in the olive oil first, then all the onions, garlic and cabbage. The flavor of the corned beef would then permeate the cabbage mixture…. love that flavor!

      For me it’s the other way around - sauté onions and garlic first then add the corned beef and then the cabbage. The onion/garlic oil will infuse the meat and the cabbage. In my culture we sauté the onions with chopped tomatoes, mainly fresh but preserved in oil works, garlic & hot peppers then crumble in the corned beef cover and steam cook for a few minutes before adding the cabbage. Sometimes we will add corn kernels. Serve over plain steamed rice with slices of cucumber and tomatoes and that’s a fantastic dinner. 🤤

    I made my paternal grandfather's beef veggie soup the other night. I use a bag of coleslaw in place of a small head of cabbage and shredding a bunch of carrots.
    It's a favorite soup of mine. Lots of onions and garlic along with stew meat and potatoes. His recipe calls for beef short ribs which are expensive. Stew meat and beef broth work just as well.

      I waterbathed a recipe for canned Cole slaw. It’s delicious and crisp. All the ingredients are in it except you add may when you open it. Recipe is a keeper.

    You mention coleslaw mix, if the price is right, I'll use the coleslaw mix to
    make sauerkraut. It's already weighe
    d which saves time (one needs only to weigh the salt at a 2% ratio to make it work with the cabbage). I check for a price reduction everytime I shop.
    PS: I'm so going to try this - I've actually been wondering if it could be done and a great candidate for the bagged slaw mix❤

    I've been cooking what my grammaw called fried cabbage, but it's not actually fried per se. She fried bacon ends and pieces or bacon grease with sliced onions then added cut up and rinsed cabbage to the cast iron skillet. She added salt and pepper then put a lid on it so it could simmer on low, with occasional stirring. The cabbage released its own water and boy it was always so good. I'll have to figure out a way to get the same effect after I get a slew of cabbage dehydrated. Thanks for sharing Pam. We also enjoyed corned beef and cabbage but she crumbled the beef in the skillet. Plentiful ways of making and enjoying a great dish.😊

      One year I stored cabbage with root still attached in my basement. Late winter or early spring (can not remember) I used the last and had to peel about an inch of dried outer leaves (large heads) and interior was as just harvested.

    I hadn't even thought of dehydrating cabbage but it's awesome that it worked! Memories are great. Sometimes I get a smell of my grandpa's car....I'm 68 & was 5 when he died.

    ❤ Once again a video where I've learned something new in my old age, thank you! I can't wait to try your corned beef and cabbage recipe :) Of all of the many vegetables that I dehydrate, I use dehydrated cabbage most frequently. I throw big handfuls into ramen (along with dried carrots and green onions and egg) to make it a little healthier and more tasty. I will now start blanching my cabbage though I never had before, I love the color difference.

    My Mom used to make cabbage and hamburger. Only additional ingredient was salt. As an adult, i cook with a lot of herbs and spices. But now and then i make simple cabbage and hamburger. Memories flood my mind when i do.

    I have lived in ireland most of my life . I grew up on a farm . We made butter, grew vegetables including the noble cabbage, sent milk to the creamery etc. I have never, ever had corned beef and cabbage. Yes we bought those little tins and used them to make sandwiches for school. I would LOVE to see the "real" corned beef.
    I love your videos Pam and Jim. You guys make me laugh and cry ❤. I was thinking that todays video captured a rare occurence when Jim said yuk in your kitchen Pam. Ha ha. 😂❤❤❤

    We were gifted the most beautiful dried borscht. It looked like flower tea, and tasted yummo. It was dehydrated beets, cabbage, onions, potatoes, dill, and that's about all. We needed to cook it up in chicken broth. Yummy.

    I wasn't there, but the first batch looked papery on the video. The second batch looked so yummy! I do understand about memories flooding in when you taste something that your mom used to make.
    I had a memory like that this week. For me it was the Yankee candle display in a store. I didn't know it was there, but I was in the vicinity and could smell the fragrances. It reminded me so strongly of my sister that I cried a bit in the store. It was sad, but it made me happy at the same time.
    It is amazing the way we remember tastes and smells and the strong memories they evoke within us as a result. I'm glad you got to go "home" for a minute in your memory.

    I’ve been putting my cabbage upon the shelf that way for a while now, and it’s wonderful once it’s reconstituted with water. It’s also a great way to keep your cabbage shelf stable, so go have fun with more dehydrating, and keep filling those jars! 😉

    I was touched by your throwback moment❤. I dehydrate cabbage often but have never blanched it. I just throw it in a pot of boiling water with some bacon, salt and pepper. I really think cabbage is one of the best things to dehydrate. Thank you for all you and Jim do to teach us safe food preservation.

She did several different variations to show how to best not only dehydrate, but then prepare the cabbage and I love cabbage so much that being of the buy it when it’s cheap and dehydratedor later use would be absolutely wonderful so that I have it in different ways your videos are so informative

    Rats! I just put 2 heads of cabbage in my dehydrator. I did not do my research and just followed what I thought was common sense. I only planned to use in soups. I sliced thinly. I did not blanch. I tossed with a little salt - let it set for 45 minutes - squeezed out the water (there was lots of water). Now it’s dehydrating. I suspect in will not take long since it was thinly sliced and much of its water extracted. Guess I will have to make powder. Cabbage powder- doesn’t sound tasty. Wish I had watched your presentation, Pam. I WILL in the future! Great video. Patricia

    As you speak I am scalding 3 heads of cabbage to make stuffed cabbage Middle Eastern style. Rice onions, allspice and salt. Plus garlic in the lemon broth
    For most of the year I make stuffed grape Leaves over browned lamb breast or lately since I can’t find the lamb breast so I found
    Reduced special lamb chops which is a shame but I am not complaining. It was much less fatty.

    I've been dehydrating cabbage for a few years. It's perfect in soup or to jazz up instant noodles (ramen or pho) or to put in a stir fry. I've never blanched it and it always comes out well, but it probably makes sense it you're dehydrating bigger strips versus smaller chopped up cabbage.

    Aloha Pam. In Hawaii we cube the onion and fry it up with garlic. Then we crumble the whole cannot corn beef. Fry that up a little then add the cabbage into it and let it cook for a little bit after adding some salt and peeper. Scoop some and place it over hot white rice. I will definitely begin dehydrating cabbage. Never crossed my mind to even do that. Mahalo for your great content.

    I dehydrated cabbage a year ago and am now trying to find a good dried soup mix in a jar that I can use it in. It's good to know the cabbage will rehydrate that well in a soup. Thank you for this video.

    I dehydrated a head last fall to experiment.. then rehydrated by boiling .. I drained and added a little bit of butter and salt and pepper.. so good.. I liked it so much I did another 5 heads.. great way to preserve..
    In past years i had just shredded it and vacuum sealed and froze it..

    Very excited that you did dehydrated cabbage! My favorite meal! Mom used to boil but I always baked it. Happy that I rehydrated as I love cabbage. Thank you once again. Also made mozzarella and ricotta. The rennet tablet didn't dissolve enough as the mozzarella was dry but I let the curds sit overnight and in the morning I had about a cup and half of ricotta all out of Auguson's dry milk. Thank you for all you do in the testing process. Hugs on your mom's memories.

    I am chowmien dehydrated everything. Took this away camping and I must say that you could taste the cabbage in it. Delightful. Also dehydrated stuffed cabbage. Of course you can’t dehydrate this bundle of food, so I took it to pieces and dehydrate each part. My only complaint with this meal was there was not enough cabbage.

    I haven’t any dehydrated cabbage in my storage so I will surly be adding some. Add some dehydrated carrots and potatoes and you have a wonderful Cornbeef and cabbage meal from your storage. We have corn beef in cans also stored. We are not very fond of the canned corn beef but in an emergency situation it will be delicious. Thank you Pam. Definitely trying this. Love cabbage,

    Just throwing this out here. Irish people don’t eat this meal. I might be able to use that cabbage and rehydrate it with some milk or cream and butter and then throw it in with some mashed potatoes to make colcannon.     Thanks for showing this. I have dehydrated cabbage in my pantry made with cabbage from my garden. I haven't used it yet because I wasn't sure how to rehydrate so that it tastes good. I appreciate your showing the fail also, so I don't make the same mistake.

    I have dehydrated a lot of cabbage this winter, and I corned some beef awhile ago, too. So happy to see this video. I didn't use baking soda, but I have another head to do and I'll try it.
    So glad the memories were good ones.

    I've freeze dried leftover Curtido, a Mexican slaw I make. And rehydrated it's awesome and fresh tasting! I've also freeze dried my homemade fermented sauerkraut (at 90 degrees to keep ferment nutrients) and that tastes great rehydrated.

    If you do another experiment, maybe try a little bit of citric acid or salt and see if it stops it from getting brown when rehydrated. My logic is those work with apple slices to stop them from browning.
