    The guys hands are waterlogged not fungus as some people are suggesting in comments. Its a normally reaction to the body. If he wore gloves that wouldn't happen to this hands. He is cutting and washing fish all day, that's why he got waterlogged.

    The dragonfish and parrotfish sashimi they sell at these stands are almost entirely for show (i.e., they look cool and/or 'exotic' so people eat them.) Dragonfish has the consistency of red snapper but fishier flavor, and with parrotfish the strongest flavor is the sear (most of the time people sear the fish with a blowtorch), the smoky taste, instead of the fish. I'm not saying that it tastes bad, just that you could just buy red snapper, tuna, etc. for MUCH cheaper and get an objectively better flavor...

    I've been yelled at by my weeaboo friends when I mix the wasabi into the soy sauce. Like "YOU SHOULD NEVER DO THAT, PEOPLE IN JAPAN NEVER DO THAT" and here you have someone doing exactly that. Thank you for giving me proof so I can tease them.

      I've been mixing wasabi into soy sauce for over a decade, and using a teaspoon to finely 'grind' down the wasabi into the sauce. When the proportions are right, having the end result mix with sashimi/sushi is like having a party in your mouth.

      It took him about 36 seconds, for two fish, to cut of the belly part including the innards, partially split the head, remove the gills and immediately rinse it. 99.9% of possible contamination could only be on the inside membrane of the rib cage, or after a flip on the back, on the very wet and still fish slime protected skin. Neither the rib cage, or skin are consumed. In such a short time and very wet conditions, the stomach acid, or more likely the content of the gallbladder, couldn't work fast enough to do damage to the then used filets. ^^

      I doubt it. He seems to have a lot of experience handling that fish compare to the second guy. But I’m pretty certain most of the Japanese guys that work there knows what they’re doing. I just think handling fish and water has its consequences to their hands, lol. Pretty sure it’s better to handle fish with bare hands and it must be annoying having to use gloves to prepare fish. I’m just a germaphobe.
