    Elvers have been fished almost to extinction here in Maine, no wonder they have to sell fake ones.

    I love the taste of squid and octopus. I've never had the pleasure of tasting eel. What does it taste like?

    • @AtomicShrimp
      @AtomicShrimp  8 лет назад +37

      Full-grown eels are meaty with a texture somewhat like chicken and a mild, sweet seafood taste. Juvenile eels (elvers) have the same flavour, but the texture is quite soft and delicate - almost like pasta noodles.
      The trouble is that catching the elvers is damaging the eel population, so it's great that these canned mock elvers are available - they're about a 90% match to the real thing, and much cheaper.

      I would add that eel has a creaminess to it and is often served (also preserved) in a sort of sweet bbq sauce-marinade. Served slightly roasted to caramelize the sauce, on a little piece rice as sushi, served on a bowl of rice (unagi donburi or unadon for short) :P I never tasted fresh eel or young ones.

    Always wanted to try Elvers - but the fact of the matter is, that they are very rare here now, through being tremendously over fished in the past. They were a big part of the diet of Fensmen, along with grown eels, caught in wicker bottle traps. But not any more, sadly. If the decline stops, then I'll try them, but until then, no.
    I like the idea of fake elvers, though.

    Not sure at first, then thought: ah, fish spagettis with squid meetballs... but the sauce... Then I saw your version of bonifying: Sold! Yeah, the salad idea, that has to work.

    wait, it says in russian on the back of an octopus package that it has been imported from Spain to Russia by russian company "enlil", makes me wonder where did you get this....
    edit: nevermind, just noticed you said you bought it in Spain. The fact that it was meant to be exported to Russia and then sold locally is funny though

    Squid can, indeed, be rubbery. I once had calamari at a Chinese restaurant. They were really chewy. So I called over the waiter and said, “ This squid is rubbery”
    “Rubbery?” Replied the waiter, “Oh...... fang you velly much!”
