Actually, you're forgetting one more thing. You can use air whipped into ice cream to make crystals smaller but the best way to ensure the smallest size crystals is the speed of reaching freezing temperature. The faster you can freeze a liquid the smaller the ice crystals. Thats why dippin dots (uses liquid nitrogen) is surprisingly smooth and creamy. And thats also how the rolled ice cream doesn't taste like just pure ice, the cream is spread thin enough that it freezes very quickly.

Btw, random ramble --- rolled ice cream was a staple of my childhood in Asia :) I see sooo many "American" food trends from my childhood not credited to Asia and I'm glad when I went on Wiki, it does acknowledge rolled ice cream is from Thailand (although I'm not from there). Like not to get nationalistic about food which is for the whole human race, but it's nice and nostalgic haha 😵😵🌀
I just paid 850 for a small at the boardwalk. I don't know about your thoughts but it was arguably the best dessert I ever had. It might not be as fluffy as real ice cream but it tastes more natural almost and fresher. Just all around an awesome experience
