This is a sensational recipe and also a brilliantly made film. I have made 4 raans already, following this recipe and doing 2 more today. Only suggestion is to add some saffron. Saffron gives the meat an ethereal flavour and also adds gorgeous red colouring.
in fact it is "pimenton de la Vera" designation of origin, from Spain. I think you might find it if you look well in any country in western Europe, at least I found it in France. It is really good. Did this for Orthodox Easter dinner tonight and it was a major hit. Have to say, did it to 170F and it was slightly overdone, IMO. Saw your other comment about making it like brisket. Frankly, time ran out on me, but I’ll try it next time. Wife says it’s definitely something she’d like again.
Who else is here just to see him eat? It's kind of therapeutic the way he reacts after he tastes something. I wanna see him bite into a stake as if it was a sandwich.
I love lamb and that looked amazing. If you want you should try beef shank's in my opinion if they are cooked right they have the best beef flavor out of any cut I have ever tried.
Just say leg of lamb and i am on my way you have put this on the next level great cooking and flavors, gives me inspiration to try and improve my cooking--thanks for your video..😋😋😋👍
Mmmm that crust delicious yummy 😋 lookin!! And nothing says lovin like Real Butter Sauce. I wonder if capers in the butter sauce would be too salty. Beautiful dish PitmasterX!!😊
Awesome recipe Chef. There’s a Halal market here in town that carries fresh, local (Colorado) lamb that is absolutely wonderful. I just pruned the orchard and I have tons of fruit wood trimmings for smoke. Guess what’s for dinner this coming Sunday!
A fun fact is that virtually all lamb from new Zealand is halal. They do this by directive to enable them to sell parts of any carcass to the highest bidder that might be a Muslim country...
There are surprisingly few recipes out there fir a decent lamb dish. We eat a shed load of lamb in our family so I’ll be trying this out in the spring. Thank you for sharing 👍
Legend has it that Alexander the Great was laid to rest on a bed of the neatly folded plastic zip lock bags, that he held so consistently dear throughout a full life of greatness ...
a perfect complement to lamb is tzatziki (garlic sauce).....or just plain yoghurt....... give that a go next time....... and keep up the great work.......i sit here drooling as i watch your channel....... cheers.....tony.....
Hey, have you heard of a carbon steel pan? They say it is as good as cast iron for searing, if not better, I own one and I must say it is amazing, it would be funny to se a comparison video
Tried this recipe a few weeks ago minus the yogurt and I forgot to score it. Looked nothing like yours but still turned out amazing. I'm trying the same marinade with chicken thighs tomorrow!
Many Americans say they don’t like lamb because they grew up on the US hotel restaurant Easter preparation of roasting it with only S&P and serving it with mint jelly. Lamb is a sweet meat and cries out for savory preparation. Indian preparation of lamb is in a totally different universe than the typical US preparation. I often use coffee rubs on lamb as well as the cumin and cardamom for a savory offering. Lamb is one of my favorite meats, but I cringe every time a waiter offers me mint jelly with a rack of lamb.
Absolutely great, but I marinated for 48hrs, which IMHO makes it even much better ... I‘d love to see more recommendations which side-dishes you‘d recommend ...
Just adding that extra garlic flavor to any bbq meat instantly becomes my favorite I myself just add salt+pepper+paprika+garlic cloves+yogurt To any bbq meat
You can cook lamb medium-rare just like a beef steak/roast, it would be even juicier! I mean leg of lamb roast is popular all over europe, I think this marinade would work fine.
Mate I am subscribed and all. Love the videos. Still dont know if you are little bit crazy by the way...would love to have a beer or two! Ps. Great recipe!
Lamb leg is the worst cut of lamb meat in the Middle East. We use it for ground meat or sausage because it’s really tough. I’m impressed how you made it so juicy and tender. You should really try the lamb shoulders with the same recipe. I guarantee you love it
Coriander IS VERY POPULAR in the Americas. Look at Mexican food. It's VERY widely used in the USA also. We call it cilantro. Coriander seed isn't as popular.
After indian lamb next greek lamb (and even though I am eating keto at the moment I would be even happy to see greek lemon potatoes to go with it! ;)). I am generally not a fan of gamey meat but I do love lamb meat.
What do I do for work? I suck the crap out of portapotties and put in fresh water, with the blue powder deoderizer. Want to know what it looks like when it comes out of the portapotty? go to 7:56 lol
. . . what I really love is when you are referring to recipes: you never do take such izzy measurements like "one half teaspoon" or "five black peppercorns" too serious :-) - you always make a good guess or eyeballing . . . a bit more is better - oops . . . that is what I call 'real life cooking' . . . 🤤
i love how the silicon glove is holding the knife and the bare hand is holding the scalding hot meat :P
Hahaha! Well noticed!
Lynn Kramer the glove is so that his hands don’t get dirty

Hi Pitmaster, what was the cooking time in the grill? I will try it tommorrow. Thanks.
Growing up with Greek's next door I ate lamb all my life! Yummy
Why so high temp at 92°C Pitmaster? I take mine till 76°C after resting and it comes out perfect.
Than it has reached and extreme tender level, like brisket
I never understand why lot of people don t like lamb smell.I love it.Not the smell of raw lamb meat but the strong smell and flavour of grilled lamb.
@1:57 that's smoked paprika right? Not chili power

Yeah, that's what I saw. A smoked spanisch paprika !!!

Pitmaster X what do you take the lamb all the way up to 92 degrees ? Does it break down the fibres in the meat and make it more tender ?
Exactly, I want it to be tender like brisket
Is that Greek yoghurt or hung yoghurt the two are different.
Who else is here just to see him eat? It's kind of therapeutic the way he reacts after he tastes something. I wanna see him bite into a stake as if it was a sandwich.
Thanks for your recipes, I am enjoying it from Ecuador. I have been waiting for something spectacular how it.
My pleasure Jhonny!
Great video! What was the total cook time for this on indirect? Thanks
Just made the marinade now got it in a vac bag over night.should I put it in the spit or the smoker???? Nice video mate love the channel
I think i may have put too much salt in, or is it supposed to be quite salty?
Hi, I'm going to try this in thew weekend. I got most of the recipe but couldn't make out the type of flour used.
I've done a similar recipe and marinade but used a shoulder of lamb rather than a leg. It's simply amazing. I'd happily get fat on a dish like this.
You can't go wrong with shoulder as it's almost impossible to overcook. Trying out this recipe tomorrow...
Back in the day they would give mint jelly as dip for garlic marinated lamb, New Zealand lamb is hard to find but very worth the effort.
Me too I think this guy is great..
Is this marinade suitable for kids to eat?
Hey bro nice video. Have tried a turducken or Shepphards pie?
do i find the written recipe somewhere or do i have to write it down? have so much lamb in my freezer and this recipe sounds amazing!!
Sorry no written recipe
@@PITMASTERX thanks pitmaster. It was not easy to find almond flour but have it now. Will cook your recipe asap!! Sounds amazing
@@PITMASTERX that is dumb
What could I use as a replacement for the yoghurt? I’m dairy allergic.
Someone standing by with an epi-pen and the emergency room on speed-dial. This dish looks like it's worth it. 😉

Can the final result be affected if the precise measurements are not followed?
Is this from the Live Video about two weeks ago?
Hey man can you recommend any good all purpose rubs ?
One of the things about this channel that I love is how they acknowledge other cultures food. Keep up the great work 🙌
Thanks bro
the thing I hate is that there is never cook times mentioned . you gotta pay for that info .
I'm going to make this at the weekend. It looks amazing. How long did the cook take?
how long did it take to smoke that?
How do you rate the Napoleon vs Weber - which do you prefer?
Love extreme flavours!

Another amazing recipe, I'm going to try this at the weekend. What was the cook time please? :)

Alex VI Good to know and makes perfect sense with large Muslim populations reasonably close to NZ.

It makes financial sense though to be able to sell to highest bidder wherever they are.

how long did it cook?
Can I please please please do the Aussie subtitles for this video/channel.

Great indian cooking! :-)
It used to be the cameraman got very little meat, but now he is overfed.
hahahahah .. noted. On your account he is getting less Wyatt 😂👍
@@PITMASTERX I've noted the cameraman still gets large portions in recent videos. If he gains to much weight he will not be nimble with the camera.
