1:07 - just so you're aware, these things usually can create what's called a pace lock. it happens on those things that change over time where if you earn time you gotta lose it back just to be in the right cicle later. it's kinda sad it happens but oh well...
i do wonder why pommes gaming is saying he liked the old flying better. i think being able to accurately adjust your pitch is a lot better than constantly porpoising
One issue I noticed with your runs is that you kept chasing a gap in the fans rather than aiming for the gap that would be there when you arrived. In anything like this you should prefer to adjust against the direction the series of openings is moving.

I'm going to start something, i know it, but it's got to be said. Flight simulation is always better with a controller. And roll is better than yaw. The joystick is literally the flight stick, and the pedals are the bumpers. Opposed to physical keys you have to press that have no in between. And the flight stick always controls pitch and roll, not yaw. That being said, I couldn't play zeepkist on a flying map. I would end up crashing into stuff trying to preemptively roll. Kudos for being able to reprogram yourself like that.
Can you do a track where you have to drive on the fans. Idk if it’s possible, but the fans would be put to 0 or minimum and the you drive from one blade to the other.
If the people complaining about not being good at or not liking the flying in the in-game chat would spend as much time trying instead of typing, they might actually get good at it.
Can't believe I didn't realize the correct path earlier. So much time wasted and was instantly at better pace after changing up 😅

The flying maps are fun to watch when others suffer, but are a pain to play them yourself.
