Excellent job! I'm a senior on Social Security, so my budget is tourniquet-tight. I strive to waste nothing in the kitchen, and to make everything I buy stretch. I pay close attention to the sell by date on milk that I buy and either make yogurt, farmer's cheese or ricotta out of anything that might be getting close to turning. It's awesome to see young people learning to do this, too! So many delicious things can be made of things that many throw away. Aside of "rescuing" milk, I also keep an eye on my fresh produce. Most everything you buy can be given new life by canning or dehydrating. A freeze-dryer would be nice to have, too, but Wow! They're expensive!

But your comment about not wasting food & stretching what you have, touched my heart ❤️ so much❗️I’m retired now & depend on Social Security. My sweet mother worked full time but took as much overtime as she could get, so my grandmother, who lived with us, took care of me & my brother, did most of the housework, as well as a good share of the cooking. We ate a lot of suppers my mom & grandmother called “hash,” which consisted of various compilations of leftovers in our refrigerator, regardless of what they were. They were then all mixed together & reheated in a large cast iron skillet on our kitchen stove. My grandmother became a widow in her early 30s & had 3 children to support as they struggled through the Great Depression. Their struggles were indelibly imprinted on them & consequently factored into how I was raised. My core values about wasting anything, but especially food, was a lifelong gift they gave me. Fast forward 60+ years, I still remember what they taught me. Among their endearing recollections of many experiences, their descriptions of standing in long lines outside for up to several hours, in Caribou, Maine (very close to the Canadian border) in the harsh, bitter cold winter weather to receive fairly meager portions of things like sugar, flour, or other government commodities. However, when they talked about their experiences of how they survived on almost nothing during the Great Depression, I can’t recall either of them complaining. Both of these strong women were so grateful to receive commodities, of which my very resourceful grandmother would utilize to the best of her ability. I feel fortunate to have had them as role models while growing up. BTW, my dad left & we lived in a car at a gas station parking lot for an entire summer until my mom had enough money saved for the 4 of us to move into a little rental house.

For years I've been making cheese from fresh milk, and any amount of expired milk I've thrown away. But immediately after this video I went and took the expired milk and put it on the fire to heat up and add lemon and then drain it. I'm so happy. I will grill a large red pepper, remove the peel, cut and mix with cheese, add several grilled garlic cloves, black pepper, dried mint and salt. It's really delicious.
Watched this vid at 8:30 this a.m., started heating milk at 8:50, turned the heat off and added the lemon at 9:40, left to take the kids to swim lessons and returned at 11:20. I strained it into a thin cotton towel and have hung it to collect the whey. It is now 1:00 and it’s likely close to being done. I can’t wait to make my ricotta for dinner tonight. Yay! So easy and so fun. Thank you for the amazing videos.
In my humble opinion, I think you should create a book featuring all the wonderful things you create. On my mother's side her parents had a farm and I used to make butter. On my Dad's side, he was a Goat Farmer on the side. He made Cheve and would give it to his friends. Back then, such cheese were not as popular as it is today. You bring back many memories. You are very Good. Living in Louisiana, guy's grew up knowing how to cook.
Queso fresco will 10000% get eaten in my home! Crumbled onto beans, chilaquiles, tostadas,enchiladas, tacos dorados.. the uses are endless with Mexican food :) I’ve seen tutorials on how to make it before but you added the ricotta being made after which makes it stretch so much more. A number ten can, sans top and bottom, works well to press cheese. I use an old barbell weight to weigh the curds and the system works with or without a cheese cloth.

I really enjoy watching creative home cooking videos. These looked really good! One of my favorite recipes I learnt since moving to India I make with my husband for breakfast, lunch or dinner is paneer bhurji served with either rotis or parathas. Here's the recipe. Note: there's no exact measurements, so season to taste. Can omit the green chillies if it's too spicy. In a large skillet or wok heat 2 Tbs oil add pinch of whole cumin and mustard seeds until they sputter. Add chopped onions, bell pepper and thinly sliced green chilies and cook a few mins. Add a few chopped tomatoes and cook until they make a sauce with a few Tbs water and add salt, red chili pwd, coriander powder, turmeric, black pepper and garam masala about 1 tsp or pinch of each or to taste. Add crumbled paneer cheese and coriander leaves and lemon juice and heat a few minutes more. Note: the onions, chilli, pepper, tomatoes and same spices are used as the gravy base for most all Indian curry dishes made with just different types of vegetables or occasionally chicken or mutton for non veg. These dishes are simply called Sabji (meaning vegetables) here and are the base of most every meal served with rotis or rice and sometimes plain yogurt or butter milk on the side. 😋🍛

I make the same type of cheese. I use vinehar and heat the milk to 200 degrees. Thanks for sharing the followup cheese recipes. I?have tossed a great deal of whey down the toilet. Now l can experiment with ricotta and cream cheese. I like to take the cheese l make in strips like french fries. I dust the strips with flour or corn starch. I deep fry the cheese until it is barely golden brown. Thanks for sharing a great video.

I love the recipes, but worry about the amount of eating you do on these videos. You gain knowledge, but loose your waistline. Every bite counts. If u sample everything , then sit down for the meal, there goes your waistline , blood pressure... Just saying.

After further examination though, it is more like a queso blanco than a queso fresco

Soy cheese is called tofu. I've never frozen milk, so if it's possible, I'd assume you could freeze the whey too.
I’ve frozen whey in ice cube trays and used them in smoothies and baking (thaw them for baking).

No, farmer's cheese is too soft for that, mostly harder cheeses can be aged.
This kind of cheese needs to be eaten within two weeks.
I like onions from raw to cooked but you would get a failing grade for serving raw onions and peppers in a dish like this.
You didn't even mention melting it into mozzarella?
