It can depend on the cheese you use, some places use a pizza blend which is usually Mozzarella, cheddar and parmesan cheeses. Some places use just mozzarella. The other factor might be that pepperoni contains lots of grease which will make everything slide off.

Yay! I'm happy to see you back! I love the video! My family makes pizza fairly often here are some things you could try to help with your problem: -Try using a little less sauce. (If you like LOTS of sauce, you can use the pizza sauce as a dip, but a layer too thick makes your ingredients slide off). -Also, raise the edge of the crust just a bit (you don't have to make it super thick, just turn it up a little, give it a bit of a lip). -Don't put the sauce all the way up to the edge of your crust, instead, sprinkle the cheese a little closer to the edge of the crust, a little past the edge of the sauce. The cheese will crisp a bit, and adhere to the bare crust without sliding on the sauce. (The layer of cheese has to be really thin at this edge though!) -Make sure the layer of cheese across the rest of the pizza is very even, not clumpy, and when you put the other ingredients on, sprinkle a little cheese over top of them. Don't overdo it, too much cheese will also be slippery! -Make sure your toppings are distributed very evenly across the pizza. Don't make the pizza too heavy in the center. Think of how you'll cut the pizza and make sure the tip of each slice isn't weighed down too much. -Let the pizza cool for a few minutes to set the cheese a little before you cut it. -Make sure your blade is sharp. A dull blade will pull on the cheese and loosen the toppings. -Some people recommend brushing a little olive oil on the crust before you put on the sauce. I've never noticed that it made much of a difference, but it may work for you.

So happy to see you again. Thank you for your video. The thing that has helped my toppings stay on my pizza is letting it rest/cool for about 5 minutes before I cut it. Sometimes the type of mozzarella cheese matters. I use part-skim cheese and I shred it. If the mozzarella is too fresh and moist, it can slip right off. Good luck with your pizza. But you should always use hight quality ingredients (mozzarella and tomato sauce) if they are good they wouldn’t slide down the pizza 😉 and also you don’t necessary need 25h of fermentation. 3 or 4 hours will be enough ☺️. Try to let the pizza set for some minutes before cutting it. You will be fine! 🤍🤍
Hii...Well I'm not Italian but I'm a chef so maybe this little tips can help you while making pizza.. • The topping tends to slip off due to the following reasons:- 1. If the pizza base/crust is too thin. 2. If you use too much sauce. 3. Maybe be the sauce you are using is too thick in consistency or it contain too much much oil. This are the possible reasons... try correcting this points.. Also you can try pressing down the topping lightly onto the base, so it can stick to it.. * most importantly if you brush the skin or the top of the base with oil before applying the sauce then avoid doing it, it results creating a 'slip layer' under the sauce..causing the cheese and topping to slip off* Talking about the cheese pull it mainly depends on the right temperature.. let the pizza cool down for a minute and then try it..one thing I learned from my senior is that 60 -65° C is idealy the perfect temperature for achieving a perfect cheese pull.. So these are few tips I don't know whether it will be of any help..but yeah at least you can try giving it a shot..all the best for pizza making..🍕

If I make pizza by myself I always let it cool down for like one/two minutes after it comes out of the oven, maybe that could help? Like that, it's still really warm but maybe (at least thats what i think) a bit sturdier to hold all the toppings?
Is your crust too thin? If the bottom is too thin for the heavy filling/toppings, then it will always be floppy. When I go to a real Italian restaurant, the toppings slide off too ☺️ I just use a fork and knife to eat it then . That is what most people do in my country when eating thin-crust pizza

Not italian, but if the toppings are sliding off then maybe the dough is too slippery (I'm definetely wrong). But you said that you put a lot of oil in the dough so I thought maybe that was the issue😅
