    Just curious as to how long the smoking takes? ball park other than checking internal

      My fish was cooked in about 16h

      There are many variables at play with heat being the biggest one. In this video I was doing it in the dead of winter and it can be challenging to keep the smoker at temp. That said, anywhere from 2 hours to 10 hours would be a good (large) range for consideration.

    Wood selection? Have heard to use fruit woods?

      For smoking of white fish I'd go with apple, pecan or even oak. Yes, the fruit woods are a solid choice.

    Have you tried doing this with a dry brine? I imagine you could skip the drying phase.

      Yes, I've done a dry brine too. Like you said Andrew, with a dry brine you're actually pulling out moisture before smoking so that's a good thing. Have you tried both?
