Ginger Beer was the first thing I brewed with a dark ale LME kit. It turned into ginger beer, sort of, it worked, I drank it, but I probably wouldn't do it again, I would use a sparkling amber if I did.
Am I the only weirdo that likes to call ginger beer "Mule Juice" ? I think I'm going to try these with demerara instead of normal sugar and see what happens.

I brew a ginger beer with extra pale malt and loads of grated ginger in the last 10 min
I love Moscow Mules as well. You can also use Scotch which is called a Glasgow Mule.
Or an Irish whiskey for a Dublin Donkey :D
