Is there a way to fit a donkey into between the fence gates in the first design? (EDIT) I found the way... A baby donkey will fit between these gates, and once he (she?) grows up it won't be able to jump over. But he will still spin around.
the command doesn't work but what I use is... a get a repeating command block set it to always active and type /tp@e[type=horse,r=10] (now type the coordinates where you want the horse to be) finnaly type in chat /gamerule commandblockoutput false and place down a horse near the command block. boom you have a horse frozen there. the only downside is that the horse can move its facing direction for instance it can turn left and right but can't actually move. but that's fine because it's more realistic anyway!

the wagons are too heavy for horses to carry
well, you can't make a smaller wagon with as much detail, you need to sacrifice a bit of realism for more detail and better asthetic
