Im usually a low and slow guy, but I drank too much last night and woke up late. Im currently an hour in and giving your instructions a try....ill let you know how it goes.
Total time spent on the smoker was 11 hours @ 300 for a similar weight (did not capture exact weight)...additional 45min rest time....as a low and slow guy, I did not notice any difference in rendering of the fat. I used a pellet smoker (competition blend) regular mustard as a binder, Kosmos Q Killa Bee, no trim, aluminum water pan right under, apple juice/cider vinegar spritz every hour till 165, wrapped with tinfoil and placed it in a foil pan till it reached 205....ended up pretty damn good. Made amazing street tacos with the meat. Thanks for the tips...smoked cream cheese was good too.
First of all, great channel. Not sure if I missed you mentioning it but what is the model of Traeger that you used? Also if you were to recommend a smoker for a “noob” which one would you recommend? I’ve looked at both the Traeger and Bradley, and see the pros and cons of both but curious which one you prefer to use. Thanks, and keep up the great videos!
Thank you, appreciate the kind words! I use a Traeger Pro 780 and it is pretty awesome. Both the Bradley and Traeger do very different things so I guess it really depends on what type of cooks you’re looking to do. Bradley is great for smoking low and slow where high temperatures are not needed. You also get to control the amount of smoke you add along with the time as the bisquettes are independent of the heat. The Traeger is a lot more versatile as it can go from 160° to 500° and is also much larger. The lower the temperature the more smoke it produces and vise-versa. It does come with a much heavier price tag though. I’d say if you’re looking to start smoking and to try it out but aren’t sure if it’s your thing, the Bradley would be the way to go. Produces good results and it is reasonably priced. Can always upgrade too if needed but you can’t downsize without taking a bit of a hit. There are other pellet grills like Pit Boss that can make it more affordable to get into a pellet grill/smoker, something to consider as well. Hope that helps!

Bro. I tried this today on my recteq. I did a much smaller butt, used my fav seasoning, hickory pellets, 300 the whole time. Amazing! So juicy!
