OMG! I JUST MADE THESE LAST NIGHT. DE-LICIOUS!! It was Sunday and I needed to make something comforting. It was raining, snowing, wind was blowing, leaves were flying. And I made these muffins. And true to her word, Chef AJ came up with a winner. I didn't frost them - you really don't need to. They're amazing as is. My hubby is not plant-based - and he turns his nose up at everything. I sat down and was eating one of these babies, and he's sniffing, saying "what are you eating!" And I asked if he wanted a bite. He took one bite and took my whole muffin. That, to me folks, is testament that they are that good! Holy Cow!
Made these with 1 cup of my own date paste and no frosting. Added walnuts and 1 oz. choc. chips. Dense with no leavening agent but quite satisfying. I'll make these again. I used 1 1/2 cups of oat flour and 1 cup rolled oats. Next time I might add 1 teasp. baking powder.
--To James, Thanks - I wondered what the consistency of the end product would be. I tried the muffin recipe on Nutmeg Notebook's site; I had to throw them out. They were TOO dense. They just became little bricks by the end of the day. My husband said they were like little weapons they were so dry and dense. I really want a recipe that is healthy but also somewhat enjoyable. You think adding the baking powder will help it at all? Let us know if you try it and it works. I like the adding in the walnuts.
I've been making apple butter with baked apples that I uses as date paste for baking. And fig jam both with fruit grown in my connmunity garden. We have grapes too that can be into raisins,
A keeper. Thanks AJ! Those interested in optimal health should compile a number of low fat, low calorie special treats. Oil free, or course. Your muffin recipe is great for its simplicity and limited number of ingredients. A treasure.
Your muffins look so good! I made your Strawnana muffins awhile ago and now I am obsessed! I eat them for breakfast daily. I like them with blueberries too and I add ground flaxseed for omega 3's and oat bran to my recipe for added fiber. I will try this recipe too! Thanks, Chef AJ!
Thank you, Chef AJ! I don’t understand why someone would eat a Costco muffin over these?! So satisfying without the food ‘hangover’. 💚🌱 You make healthy taste delicious 💯‼️
ChakRaw4Life ... I bought Costco blueberry muffins once. I cut into first muffin and could not believe they were yellow cake mix with blueberries on top. I didn’t eat that one and returned them back for full refund. Literally they suck. I can’t wait to try this recipe!
I just did it for the first time and it's so delicious! It's a mind blowing Chef AJ! Thank you so much for this recipie. Everybody love it in my family.
Hi Chef AJ! I think you are amazing, inspirational, and an exceptionally skilled communicator. Your relatable and authentic personality really comes through your RUclips videos and Facebook interviews. I've bought your books and can't recommend them enough. BTW, you featured another variation of this recipe with the zest of a whole orange and cranberries. (I used a 1/2 cup of unsweetened cranberry juice and doubled the pumpkin spice) They are the bomb! Wishing you all the continued success you so richly deserve!
I made these pumpkin muffins today and they are fabulous! I did not frost them, just ate them plain. Hubby likes them, too! ( he’s not plant based, so this is a win! )
thank you so much, chef AJ! i'll try with orange sweet potato because we don't have any other kind where i live. i love the rustic look of the muffins, and they are so easy to make. please get the rest you need. you should film a dozen videos in a day and rest more throughout the week. we love you!
Thanks Chef AJ! You do more than make healthy food delicious : you give wisdom and helpful understanding to make the right choices for a S O S diet. BLESSINGS!
Thank you, Chef AJ, I'm sorry you have to deal with so many whinners! YOU are terrific and your recipes are too! I just purchased your new book and as always it's a winner just like you! Thank You for this delicious muffin recipe too! :)
The best pumpkin spice recipes muffins so far, especially the sweet potato frosting. I’ll definitely make it. Thank you for all your healthiest sweet recipes, Chef’ AJ
Chef AJ, this will change your life regarding the date paste. Go to a Super King Market, the arabic store, and look near the spices section. They have cheap date paste!!!!!!! Its only 2$ for a decent block of it. I use those for making desserts all the time.
Wow what a fantastic video. You make everything seem so easy chef AJ...LOVE the can opener especially to prevent animal from cutting themselves. And as a vegan for all my 56 years I am STILL learning...eggs are periods ewww!!! No thanks lol. Also love the silicone 👌looking forward to placing my Amazon order now 🥰
I've never understood the need for baking powder/soda in muffin recipes. I much prefer a nutrition-packed denser muffin anyway. This is a recipe I'll actually try! How thoughtful to make a recipe completely appliance-free. I, too, prefer to make my own date/fig/prune paste but I've been cooking for years and slowly invested in quality appliances during my journey...
👏👏👏👏💕💕💕💕 Thank you Chef AJ for this recipe & that exceptional frosting! Wonder how a little Unsweetened cocoa powder would do in the frosting! I’m gonna try! 👍🌱🕊
Would this recipe work as a slice rather than muffins? I’m thinking that may help to manage the expectations of others who don’t eat healthily. Slices are often denser than muffins.
Chef Aj, I have a question. I have noticed that some vegan cookbooks will use bananas in a baking recipe and 1/4 - 1/2 Cup of oil. Since the banana is used for moisturizer why is oil needed? I have also seen oil used in Gauc?!?
@@CHEFAJ Hi, thank you for the prompt response. Yes, it seems as if every recipe contains oil. It's a new cookbook that's coming out. I won't name the authors name but there are video's up of the recipes that are in the book and yes, the gauc has added oil! 😐🤷♀️
BTW, I have found that very ripe bananas when fully frozen & then thawed at room temperature are very soft and runny and require minimal mashing. They are a great sweetener in baking.
I was hoping Chef AJ would've broken one in half to show the crumb, and to do a taste test. But I do know she doesn't herself eat cakes and breads. At least it seems like I remember her saying that one time.
In case you don’t know this all you have to do is add up the total of ingredients and then divided by the number of muffins that it makes and then you have your nutritional information. So each component that goes into it write down the calories for example. Then add them all up and divided by 10, as an example if it had 10 muffins as a result. I bring this up because she already does so much and that’s the least we can do is our own math.
--To Trish, what a great idea! OMG. I've been wanting to find a good cookie recipe, and I think you just provided the solution. I'm doing the Potato Reset right now, so it will have to wait. But I've saved the recipe, and I think I'd much prefer a cookie!
I love your recipes and will give this a go 😋 I'm vegan and do not eat eggs, but please stop referring to eggs as chicken periods, chickens do not menstruate.
Many people are probably not aware that they are eating someone’s period. But think about it: female chickens have a menstrual cycle, during which a hen’s ovary sends a yolk on its path. As it moves through the reproductive tract and into the shell gland, the yolk forms into an ‘egg white’. The shell takes about 20 hours to form - and that’s your breakfast right there.

Thank you, yum! A trick i use on banana is a whisk, it makes it look like a thin paste xo
Started making these as I was watching this video! I added chopped walnuts! They are delicious!!
That’s a great idea, will do those or pecans (not sure what the trad. nut is w pumpkin) ...

To grind the millet do you just grind it in the vitamix?
The pumpkin spice is sold out can you give us a substitute?
Love the recipe, but I'm not sure about the frosting!!! I'll have to try it!
It's really delicious♥️
I make chocolate pudding with the white fleshed sweet yams and it's outta this world!

Or some vanilla!
MsFit Vegan Oh yes!! For sure!! 👏👏🌱🕊
The frosting looks delicious! I never thought of using sweet potato. Could you add baking powder to the muffins or is that a no no?
You can try it, but not sure what effect it will have, if any,
Would this recipe work as a slice rather than muffins? I’m thinking that may help to manage the expectations of others who don’t eat healthily. Slices are often denser than muffins.
How does this affect blood sugar?
Ha! Went to place my order and out of pumpkin spice already! I would think you would be able to use the regular and add pumpkin pie spice yourself?
I think that would work😊
where can I buy Wanna Date Pumpkin Spice Date Spread?
how many muffins per serve? one?
Any suggestions if only orange sweet potato/yam in my area?
What could we use in place of the oats? I don’t ear oats but I do eat millet. Could I use more millet?
I've never tried that so I don't honestly know, but if you do, let me know how it turns out, Thanks!
If using just date paste in the recipe, what additional spices should I use to compensate for the Wanna Date Pumpkin Spice Date Spread?
Whatever you use, make sure to taste it. You can't go wrong with cinnamon and a dash of nutmeg. I like to add ginger, too.. trust your palette. 👍
Probably just extra pumpkin spice. That's what I would do anyway, as I'll make my own date paste.
I would add pumpkins pie spice to taste
i love WLW woot woot

I'm not sure why they use oil, but you can always sub applesauce for the oil in baking. Adding into guac is totally unnecessary!

Can you use organic almond flour and almond meal combined instead of oats and millet?
You can try that and see how it turns out.
Stacy?? Off grid with doug and stacy
Can’t wait to try these! How long does the date paste stay fresh after opening?
I'm sorry I don't know exactly, but there are probably instructions on the packaging.
I just looked on the jar, and it says it will last for 30 days ♥️
Thank you so much!

Chef AJ, will you come and live with me and cook every day? LOL

Thanks for asking---it is slowly getting better with therapy♥️

Why didn't you use fresh pumpkin?
Looks like she wants to show a very simple, do-able recipe. Those who want to use fresh (not canned) pumpkin can do that if they want to.
Omg cool can opener but totally scared me too see you run that lid over your wrist... lol
LOL!
