I've got 'homemade' tortillas and some great wild Patagonian 'pink shrimp' that will work perfect for this. (I even have some fresh 'rough chopped' picante sauce I just whipped up)
Many Mexican households do it this way. I would say if you choose to heat your tortilla over an open flame it will make it crunchier as opposed to using some sort of griddle skillet

I made these they’re awesome the only problem with laying them directly on the stove mine stuck to the burner so I put them in a frying pan instead

I get frustrated with corn tortillas. No amount of heating them will prevent them from breaking apart. I just use flour ones.
Tip- 1:15 Do not warm or cook tortilla on direct flame over the gas stove.
