I’ve never understood why any of the instructions in baking matter and this was the most helpful thing ever. Your videos make everything make sense. Thank you!
I think the most impressive part about these videos is that he is so well versed on what to do vs what not to do that when he is making the examples he can perfectly make something incorrectly but intentionally
@@benjaminthebaker of course! You've explained the science of baking in an easily digestable (pun intended) way for people to really understand. It's hard to find and learn the information in alternative ways. Your content is one of a kind, it's much appreciated for the work you do!
One day, I'll be able to use your tips. I'm saving for an oven, and it will take some time to save up for it. Thank you for motivating me. Edit: Woah this blew up. Thanks for all the support! I might actually look into some of the suggestions in the comments. To clear a few things up: I live in the Philippines. We used to have a gas oven before but it broke down easily so I wanted to buy a really good one (I guess two months of my current salary if inflation here doesn't mess it up?). Admittedly, my oven fund is still small because other more important expenses pop up, and when you're planning to make baking a regular activity you have to consider other expenses like baking pans and ingredients (the price of a kilo of sugar went insane last year in the Phils. around a 1/5th of the daily minimum wage haha) So there's a lot of factors why I said it will take time. This was more of a wishful thinking comment. This channel made me appreciate the science behind baking even more and made me remember how much I enjoyed my baking classes in HS. It made me consider being more serious about saving for an oven. That's all the comment is about. Have a nice day, everyone!
If you're itching to start making cakes ASAP, you can try steam baking. In countries where ovens aren't as accessible, people start with steam baking. Either way, I hope you get to your goal 😄 I'm excited for you.
I’m saving for an oven too! The one in my apartment doesn’t work. And I miss baking. I didn’t realize how much I relied on the oven to make food until now and all I have is a stovetop but I don’t like a lot of the foods made on the stovetop.
i like how this guy doesnt say that these are the "wrong" ways to make cupcakes. he just says how different techniques will lead to different outcomes.
I wonder if each might serve a purpose in addition to ppl’s texture preferences, ex. does the AP one handle a filling piped inside it better than cake flour one?
As someone who has always been told that baking is more like chemistry than we realize, this channel has helped me so much with what each individual factor does to baked goods! Thank you so much!
It really is like science, it's even more fun once you get good at it because then you can tweak recipes to your liking and do experiments with trying new ingredients
It’s really incredible that I’ve learned so many helpful baking tips from this channel just by watching like 5 of your videos so far. You make things SO much easier to understand, especially since you take the time to actually show all of the different methods and how they’ll turn out.
At first I was upset that you didn’t take the wrapper off of the cupcakes before cutting but then I started seeing it and thinking more about it and I was like you know what it does provide a good distinguishing line
I never knew you could overmix cake batter mix!!! This makes so much sense now and why there was always something different about my Baking. Thank you!
I was going to try getting into baking, but i was recently diagnosed with diabetes and put it on hold. Your channels makes me want to try again haha, once i have good glycemic control that is. Subscribed for the future.
Before I found your channel one of my goals this year was to start baking and get a better understanding of it. This is so educational. Thank you for this content!
He's so good, he can perfectly bake the cupcakes INCORRECTLY to show us the examples of what not to do. This is the first ever video I've seen by him, and I don't even bake, but I'm definitely gonna keep watching!😄
Got recommended and really love the content, would be a cool idea to add a basic recipe at the end or beginning for people that want try and bake one of theses
I love cooking, it’s something I enjoy so much but I have not always been a fan of baking. My grandmother is an excellent baker and I just recently started to like baking. Your tips and research are awesome. They have helped me so much and you have answered I believe all of the questions I’ve had. Little things that you think wouldn’t make a difference, really do with baking. Maybe that’s why it’s never been my thing. With cooking, there are certain creative liberties you can take and not ruin a dish. You can play around with a recipe and not completely destroy it whereas with baking it’s very much precise and so many things can change the outcome of an item. I really like how you break down these little things that make a huge impact on the final product it’s so helpful for those of us that are not bakers at heart. I am growing to love and appreciate the patience that comes with baking ! Perhaps it’s age too lol Thank you so much for your wonderful and well thought out videos, you make it simple to understand. ❤👏🏻👏🏻
My secret to enormously bulbous cupcake/muffin tops is to put them in at 400 and lower it to their normal temp after the first 5 mins. It shocks the sides into cooking right away and the cake has nowhere to go but up.
I don't even bake but the dedication to the craft is admirable. Artisans in the culinary field of this caliber are few and far between and don't usually share secrets this freely. Good stuff.
I just made the best cupcakes I ever had with these tips. I had already eaten two before even frosting cause they were so light and poofy and just the right texture. So much help
This channel is gonna grow fast, the videos are so good. I want to see if I can find something about bread dough cause I always screw up the part when you mix the ingredients and knead it. It always end up just sticking on every surface possible and I end up having to clean everything
I've always liked baking and even have a little skill, but this helps sooooo much! Especially just doing it at home and because I like to. Thank you so much for this!
Your videos are so awesome! When baking with others I’ve always noted how subtle things can completely change a baked good but people have always brushed me about it
I love how bake you a separate thing for each possible example. it reminds me of that image of about six cookies, each with what it'd look like with too much of one ingredient. very informative :]
I love your videos, I’m not a great baker. Seeing the different variations on things helps me understand what I’m doing wrong, it’s the scientific way lol
I love this type of video, great Job! I used to google for hours and not find conclusive results on things like "how do I know which to choose, I don't know what ingredient or balance creates what result"
I really wish you would upload these as videos, too, the shorts feature makes it hard to use practically or reference later 😢 These are always so helpful though! Great work
For a nicely "domed" cupcake, first preheat your oven to 25 degrees hotter than you intend to bake it at. When you put them in, turn the oven to the correct temperature. The slightly hotter initial heat is supposed to help the cupcake rise slightly higher. From my experience, it makes a difference! Also: if you're using a cake mix, sub out melted butter for the oil, and milk for the water. Boom, you've got a bakery cupcake.
Hi, Benjamin. Thank you for showing and teaching us these things! Do you think you can tell us your preference for each option in the comments? Maybe for all your future videos, if possible? I'm such a newbie at baking that I can see the difference but don't know when one option would be more fitting than another, e.g. when would a denser/flat top cupcake be better than a fluffy/puffed top one?
I’ve never understood why any of the instructions in baking matter and this was the most helpful thing ever. Your videos make everything make sense. Thank you!

Yes! I can bake something imperfectly, but could I teach you what I did wrong?? Probably not!
God bless and Prayers!!!❤️❤️❤️

I got a question does this work with muffins too
the key is to mix the eggs, butter and sugar really well at the beginning so they get light and fluffy and then not overmixing the flour into it
😮😮😮😮😮
gotta add the eggs one by one or start with just adding the yolks too. helps with proper emulsion to prevent separatingg

What you said 💯. Mix the wet ingredients together then add the dry ingredients. I like your RUclips thumbnail picture.
Plus baking powder can be very useful for adding fluffiness.
@@butterflysmile348 if it's alot it helps to add some of the dry to the wet when you're done mixing and than throw the wet into the dry.
I love you man, you're a great teacher and I really hope this channel gets the recognition you deserve.
Thank you so much for the support!

hey you! i recommend buying a mini oven. they're cool, useful, fun and take up a lot less space :)

Incredibly clear, concise and to the point. Your labels and visuals were excellent.

I never thought cupcake science is what my day needed to get next level 🤩

These are great tips! Another tip for cornstarch is add a bit to shortbread cookies. It makes them so soft and melt in your mouth delicious.

That cornstarch trick is neat!
I like that you don’t say one method is inherently wrong, just what it’ll produce. Like yeah go for the gummy one!
gummy and dense is exactly what im looking for!
I have watched baking shows entire life. These are all things I’ve never understood until now!
