I canned some mandarin last year. The pith, even though I cleaned them very well, made them a touch bitter. I love them, though. I suppose you could add more sugar, but I didn't want to. 😅

My mom always did the bathwater canning as she was afraid of the pressure cookers. She always left the lid rings on after processing. It makes more sense to remove them .I learned many new things. 😊❤

You can save the water from when you boiled the orange peels and use to make a homemade cleaner!

There are recipes that are more complicated definitely. This one is a cheat recipe that’s just as good, I think anyways lol

I let them sit over night. Some say 12 hours, others say 24. I say 12 is perfect and it’s always worked out.
