    OVEN BAKED QUINOA RECIPE
    Ingredients:
    1 cup dried quinoa (180g)
    2 cups grated sweet potato (300g)
    4 large eggs, whisked
    1/4 cup oat flour (25g)
    1/2 cup grated parmesan cheese (50g)
    NUTRITIONAL INFO (per serving):
    182 calories, fat 5.7g, carb 23g, protein 9g
    Instructions:
    Cook the quinoa:
    Rinse the quinoa under cold water, then add it to a small pot with 320ml of water. Season with a pinch of salt. Bring to a boil over medium heat, then reduce to low. Cover with a lid and simmer for 20 minutes.
    Remove from heat and let sit, covered, for 15 minutes to absorb any remaining moisture. Fluff the quinoa with a fork and set aside.
    Assemble and Bake:
    In a large mixing bowl, combine the cooked quinoa, whisked eggs, grated sweet potato, oat flour, and Parmesan cheese. Gently mix with a wooden spoon until just combined, being careful not to overmix.
    Preheat your oven to 350°F (180°C). Lightly grease a baking dish, then spread the quinoa mixture evenly in the dish, smoothing the top with a spoon. Bake for 35 minutes, or until the top is golden brown and set.
    Once baked, remove from the oven and let the dish cool for a few minutes. This will make it easier to slice into 8 equal portions.

    I make quinoa lasagna. Quinoa, fried ground turkey with tomatoes sauce, sliced zero spinage, cottage cheese with Parmesan and egg and layer again.

    👍 This is a good one.
    I love quinoa...have it as cereal every day. I also make a quinoa crust quiche, but I'm going to try your method of adding some flour for substance, Maybe even spinach 🤔
    Any suggestion for spicing up a crust or could you use your recipe to make a crust?

      Thanks! Quinoa crust quiche sounds great... but this recipe, I'm not sure it would be good to make a crust out of it, it might fall apart when you spread it thin, maybe if you add a bit more flour. For spices, I would give it a try with thyme, oregano or smoked paprika.

    I like to cook quinoa with rice in my rice cooker. And then use any leftovers in making fried rice.

      Love quinoa fried rice, the classic way, it's just as good as one made with rice. How long do you cook quinoa in your rice cooker?

      @@HowToCookSmarter I'm not sure how long it cooks, maybe around 15 minutes. It's one of those simple ones that you put the rice pan in and push the lever down to "cook". I had a more complicated one but I could never get it to work. So I gave it away and bought another one like the one I used to own for over 10 years before it developed a short in its cord and I had to replace it.

    I want more egg free healthy recipes, or egg alternatives for each. Out of 4-5 ingredients, one is always egg so can never make

      Thanks Kevin! You know, the cooked quinoa is pretty sticky on its own, so I think it would hold together without adding egss into the mixture, so instead of eggs you can add some applesauce, silken tofu or flaxegg, it will work just fine.

    I working on getting those cornmeal pudding recipes to you as promised.
    Quinoa is a weird word.....it is pronounced: KEEN-wah.
    Recipe looks tasty. I have some of this little known seed in my fridge, using it on occasion to boost the nutrition of white rice. Rinsing it in a very fine mesh sieve is standard since the seed has a bitter protective layer to ward off "predators". It's quinoa's own natural defense mechanism.

      Hi! I prefer to add cheese to bring in more flavor, but you can substitute it for other goodies like sun-dried tomatoes, nutritional yeast, roasted red peppers, crumbled bacon...

      Actually, I was just thinking about it, just like I did it with polenta in my previous videos, add some maple syrup, vanilla, cinnamon, it has to taste good.

      I guess that would work too, but I would reduce the amount of flax eggs and add some other good binding ingredient, let's say Greek yogurt or coconut cream.

    I think they are expecting low importation of food and having to relly on what is farmed in the country.
    They have a long term view or got lucky to invest in it in 2020.
    Things are getting comolicated in the east and its going to affect every country
