The things on display are things they won't sell. Apparently they're made by the artisans when learning (e.g. small issues with stitching etc), or as prototypes (for example, the Mini Kelly I tried from the display had a different lining to normal MKs etc). So they're eye candy and a tease, but also not available. I got a leather appointment last week via the online system, so it does work! But I agree about FSH feeling disjointed - I expected to have one SA to help me with everything (or at least everything except bags), but didn't... for that reason, I ended up buying a lot less than I had planned.

No. The thing on display can not be sold because they are manipulated by the employees and damaged by the lights. They are real models. They will never display learning models or prototypes. It would have been bad advertisement.

It's a mix depending on the store! Georges V had a 'host' up front who asked what you were looking for and directed you to the part of the store that had those items. But overall, you had to catch the attention of someone. For shoes at George V and FSH, I had to put my name on a waitlist and someone approached me when they were able to help me ✨

FSH was hectic! It was totally not a luxurious experience...felt more like a free for all flea market. Even the SAs were pushing customers out of the way to open drawers without saying excuse me. Sevres was a way better experience for me.
I think your approach to it all was very healthy. I don’t think it’s a good idea to go “plead your case”. Someone on the internet was successful and posted about it and now everyone tries it. I’m sure it’s gets so tiring for them to hear this day after day.
