    Great video! I’m considering the nakagawa, tetsujin, yoshikane or jns kaeru.
    Which would you say is best for food release and cutting power ? Looking to get a 210 and 240 gyuto one for large veg prep and one for more precise work

    Thanks for the video👍 I see they are advertised with a hrc hardness of 62-63 in some web pages and razor sharp out of the box.
