I actually found the crowds to be quite manageable. You'll be going a little later than me, though, so I'll be honest and say I'm not sure how they'll be around Thanksgiving. I have gone during the busy season with great success, though. I ALWAYS take advantage of morning extra magic hours, but not evening (personal decision, but I find the evening extra magic hours to be quite crowded, at least in the beginning, and since I don't typically stay up very late I don't make it to when the crowds thin out). If there is a day where there are no morning extra magic hours I look and see if there's a park where there were evening extra magic hours the night before and then go to THAT park the next morning. My thought process is that many people will have been there the previous night and won't come back the next morning. If there wasn't any evening extra magic hours the night before my next step is to look at which park was open the latest and go there the next morning. I hope that helps a little!
