Here is what I think Fantasmic 1.0 and 2.0 are different. Fantasmic 2.0 has better lights and colors for the water effects and fireworks with a live breathing realistic dragon. Fantasmic 1.0 has better singing voices especially during the princesses float and the conclusion with fire on the lake. Fantasmic 2.0 doesn't have fire on the lake for it's conclusion.
